True to the motto “Hattu Möhrchen?”, we delight the Easter Bunny with the juicy carrot cake for Easter. Everyone knows that bunnies like to eat carrots... All you have to do is ask my little one, she will confirm that 😉 I did need some persuasion to talk the carrots out of my little one's hand - she would much rather give them to her childminder's bunnies feed rather than incorporate into our cake batter. But in the end she was very happy that the vegetables ended up in the cake. Because she thought the cake was delicious! You can see for yourself here:

Recipe for a juicy carrot cake
For the carrot cake, the kids can mix the ingredients thoroughly. So you can be sure of your kid’s help. Maybe you already trust your child to grate the carrots... Every child can definitely use a brush to spread icing on the delicious cake.

Ingredients for a carrot cake
Dough
- 150 g white chocolate
- 300 g grated carrots
- 6 eggs
- 150 g soft butter
- 100 g brown sugar
- 150 g ground almonds
- 50 g breadcrumbs
- 1 tsp cinnamon
Decoration
- 2 little Lindt bunnies
- 6 chocolate eggs (12 chocolate egg halves)
- 100g powdered sugar
- Lemon juice
Baking accessories
Pot, small bowl, mixing bowl, vegetable peeler, kitchen grater, 26 springform pan*

Preparation
- Chop the chocolate and melt it in a warm water bath.
- Peel the carrots and grate them finely with a grater.
- Preheat the oven to 175 degrees. Grease springform pan.
- Now separate the eggs. Egg whites are whipped with salt until stiff and kept cool.
- Beat the butter and sugar vigorously with a mixer until fluffy.
- Die Eigelbe jeweils eine halbe Minute unterrühren. Stir in the egg yolks for half a minute each.
- Stir in chocolate, almonds, breadcrumbs, cinnamon and carrots.
- Finally, carefully fold in the egg whites.
- Pour the dough into the mold and smooth it out. Bake in the oven (fan oven 160 degrees) for 35-40 minutes.
- After the cake has cooled, mix the powdered sugar with the lemon juice to form a thick icing and spread it on the cake.
- Then the half chocolate eggs and the small chocolate bunnies are placed on the cake as decoration.
And tatata….! The juicy carrot cake for the Easter bunny is ready! The juicy carrot cake is very well received by both the kids and everyone else. A child's play classic that belongs to the Easter season like Easter eggs!
