A bright rainbow like this is always a special experience for me - whether it's very delicate, barely visible or a bright rainbow in a sky that's still full of rain. They are beautiful! Of course, we take every opportunity to create the colorful works of art in our kitchen! Among our recipes you will find some that are characterized by the joy of colors of the rainbow! My absolute favorite is our Surprise cake with a hidden rainbow! But our Rainbow muffins and the cakepops with rainbows are also very much loved by you!

Today we are expanding our collection of rainbow recipes with the recipe for the simplest rainbow cookies:
Recipe for the easiest rainbow cookies
You can bake these rainbow cookies even with very small kids. Not many utensils are needed and all you need to roll and shape the rainbow cookies is your hands - a tactile highlight for your kids! Let's go!

Ingredients for approx. 20 rainbow cookies
Cookie dough
- 280 g spelled flour
- 1 teaspoon baking powder
- 1 pinch of salt
- 180 g soft butter
- 100 g brown sugar
- 160 g granulated sugar
- 1 egg
- yellow, red, pink, purple, green & blue food coloring* (we used the colors from Goodbake's Happy Drop System*)
Baking accessories
Kitchen scales, fine kitchen sieve, bowl, mixing bowl, hand mixer, dough scraper, kitchen knife, baking tray, baking paper, cooling rack

Preparation
- Sift spelled flour, baking powder and salt into a bowl
- Melt butter in the microwave or in a water bath
- Preheat oven to 170°C top/bottom heat
- Mix soft butter and sugar with a hand mixer until the sugar has dissolved and the dough becomes a little “thicker” (stir for approx. 2-3 minutes).
- Add the egg and beat until the dough becomes a little lighter
- Briefly stir the flour, baking powder and salt mixture into the dough.
- Divide the dough into six parts and color each part with 4-5 drops of food coloring (yellow, red, pink, purple, green and blue).
- Die eingefärbten Teigteile zu sechs Rollen formen und anschließend zu einer dicken Rolle zusammenlegen, indem du die sechs bunten Teigschlangen zu einer bunten zusammenrollst. Die dicke Rolle festrollen und mit dem Küchenmesser in 20 gleichgroße Teile schneiden. So das jede Scheibe idealerweise alle sechs Farben beinhaltet. Die 20 Teile werden zu Teigkugeln geformt und für eine Stunde im Kühlschrank kalt gestellt.
- Spread the cooled dough balls about 4 cm apart on the baking tray lined with baking paper. Little tip: Do not bake more than 9 cookies per tray, as the cookies will spread apart during baking and otherwise bake together
- Bake the rainbow cookies for about 15 minutes at 170°C. Since ovens bake differently, you should take a look in your oven after 12 minutes: if the rainbow cookies are slightly browned on the edges, they are ready and can be taken out of the oven. Even if they still seem raw in the middle, they continue to “bake” outside of the oven and turn out just right.
- Let the rainbow cookies cool on the tray for about 10 minutes and then let them cool well on the cooling rack. If you transfer them fresh from the oven to the cooling rack, they are still soft and not hardened and can break easily!
