Colorful confetti cake for carnival

Confetti is always a great accessory, but at Carnival it's an absolute must! Of course it's the most important ingredient in our confetti cake! 😉 It's finally that time again... the fifth season is heading towards its final! It's confetti time!

Since this is my first carnival in 4 years where I'm neither pregnant nor breastfeeding, I have big things planned. Finally go back to Cologne and really celebrate Carnival! But while I was busy making carnival plans for 2019 last year, my long-time carnival companion also decided to join the moms' club and move away from Cologne. Unbelievable!!!

So, no Cologne carnival for me this year... I guess I'll have to make a virtue of necessity... I just say "children's carnival"! 🙂 – But here in the north you really don’t have a chance! – But the main thing is that there is confetti cake!

So we'll bring home the carnival party with the confetti cake in all its festive glory 🙂

The confetti cake is a cake with a surprise effect! Because his “true inside” only emerges with the first cut! A special WOW effect!

As with any batter, the minis can help you measure ingredients and mix. But they will also have a lot of fun distributing the cake pops in the dough or, of course, licking the bowl. You can also leave the decorating of the confetti cake to your little ones...because as we all know, you can never have enough confetti!

Ingredients for a confetti cake

  • 5 eggs
  • 250 g flour
  • 250g powdered sugar
  • 1 packet of vanilla sugar (15g)
  • 1 tsp baking powder
  • 140 ml handwarm water
  • 140 ml sunflower oil
  • 1 vanilla bean
  • red and blue food coloring
  • 200 g pinke Cake Melts von RBV Birkmann
  • Sugar Sweeties “Confetti Mix Ocean” by RBV Birkmann

Backzutaten

Cake pan, mixing bowl, hand mixer, scales, kitchen scraper, Cakepop-Maker* (or Cake pop baking pan*, praline cases also work), pastry brush

Preparation

  • Separate the eggs and beat the egg whites vigorously.
  • Add powdered sugar and vanilla sugar to the egg yolks and stir until creamy.
  • Now add the lukewarm water, sunflower oil and vanilla bean pulp to the egg-sugar mixture and mix.
  • In the next step, slowly stir in the baking powder and spelled flour.
  • Finally, carefully fold in the egg whites.
  • The dough is now divided in half between two bowls (dough from one bowl is used for the cake and the dough from the other bowl is used for the colorful confetti (cake pops) in the cake)
  • I divided the dough for the colorful confetti into three small bowls and colored each one pink, red and blue.
  • Cake pops are baked with the colored dough. If you don't have a cake pop maker (similar to a waffle iron) or cake pop baking molds, you can also use silicone praline molds (make sure they are heat-resistant!)

  • When the cake pops are baked, half of the “cake” portion of the dough is poured into a greased baking pan. The baked cake pops are now spread over the cake dough and then covered with the second half of the “cake” portion.
  • Bake the confetti cake in the oven for approx. 45 minutes at 175ºC top/bottom heat (don't forget the stick tester!)
  • After the cake has finished baking and has cooled on the cake rack, the pink cake melts RBV Birkmann are melted in the microwave or in a water bath and spread on the cake.
  • In the last step, mix ocean confetti from RBV Birkmann are spread over the confetti cake as desired.
