Marbled Mini "Amerikaner" in the Easter Nest

Mini "Amerikaner" are one of our favorite baked goods. Of course, they shouldn't be missing at Easter either - this time, of course, marbled and in the shape of an egg to match Easter.

Yesterday I was at the playground with the kids and we looked at the buds on the bushes and trees. Soon it will finally be spring again! It won't be long before the Easter Bunny will be hopping over the hopefully green spring meadows again and hiding his Easter eggs for us. 

The delicious Easter eggs on the coffee table are a must! While we baked a sweet family of bunnies (lemon cookies) last year, this year we are baking wonderfully fluffy and delicious "Amerikaner". So instead of lemon bunnies, there are Easter egg "Amerikaner"! “Hidden” as an Easter egg, the mini "Amerikaner" will be a cute splash of color on our Easter table! 

Little tip: The little "Amerikaner" are also a great snack for the kindergarten Easter brunch or Easter breakfast to which you are invited. They also offer a nice alternative to muffins or cupcakes for children's birthday parties. Ideal for the kids – they can be eaten in just a few bites!

Recipe for marbled Mini "Amerikaner"

The Minis "Amerikaner" are a delicious and versatile project for baking with the kids. The little ones can help with mixing the ingredients together. When it comes to getting the egg-shaped dough onto the baking tray, you can use a spoon instead of the piping nozzle. It is easier to use for smaller children. The minis will have a lot of fun decorating the little Americans, there are no limits to creativity!

Ingredients for approx. 16 mini "Amerikaner" 

Dough

  • 75 g soft butter
  • 40 g brown sugar
  • 1 pinch of salt
  • 2 eggs
  • 250 g flour
  • 1 packet of baking powder (15 g)
  • 100 ml milk

Baking accessories

Scales, mixing bowl, mixer, piping nozzle, dough scraper, baking tray, baking paper, pen or pencil, cooling rack, small bowl, spoon, toothpick

 Preparation

You can easily bake the mini "Amerikane" with your kids. I always give you tips on how you can make the individual baking steps for minis easier, or which ones you should adopt.

The mini "Amerikaner" emerge

  • Mix the soft butter with the mixer until fluffy. Next add the sugar and stir until the mixture is light and creamy.
  • Stir in the eggs one at a time.
  • Mix flour, baking powder & salt. Add the flour mixture and milk alternately in portions and mix with the mixer until smooth.

Little tip: So that the "Amerikaner" in the shape of Easter eggs get a nice and even shape, you can trace them on the baking paper with a pen. The baking paper is placed on the baking tray with the painted eggs facing down. This means that the color of the pen will not transfer to the mini "Amerikaner" when baking.

  • Line a baking tray with baking paper. Pour the dough into a piping bag with a large round nozzle (if that's too much effort, you can simply form small blobs with two tablespoons - it might be a little messier, but easier for the kids).
  • Hold the piping bag over the baking tray at a distance of approx. two centimeters. Then squise the mini Americans using even pressure. (Watch out! Leave enough space between the "Amerikaner" as the dough will still rise while baking)
  • Finally, moisten your fingers lightly with water and flatten the small corner of dough that appears when you lift the piping bag.
  • The mini "Amerikaner" are then baked at 180°C (top and bottom heat) for approx. 10-12 minutes. They should only be slightly browned and not give in too much when pressed with your finger. After baking, immediately remove the Americans from the baking paper and let them cool completely on a rack.

While the "Amerikaner" are cooling, you can mix the icing with your kids. Make sure to use a bowl in which you and your child can easily dip the surface of the American.

Little tip: If you are baking this recipe with several children or in larger quantities, for example for a kindergarten activity or children's workshop, I recommend using a drip pan. Two or three children can work there at the same time.

  • Sift the powdered sugar and mix with a little lemon juice to form a thick icing (Mini tip: Use the lemon juice sparingly, otherwise the icing will be too thin)
  • Then drip the liquid food coloring onto the white icing as desired and carefully draw 2-3 loops through the icing with the toothpick.
  • Next, you or your kids slowly dip the smooth surface of the mini "Amerikaner" into the icing. When you take it out, let the icing drip off a little and place the American on a sheet of baking paper to dry. This is how you process all "Amerikaner".
  • And the mini "Amerikaner" are ready for your delicious Easter nest.
