This quick, juicy carrot cake is a must at Easter! You can easily bake it with your children and decorate it colorfully with an Easter bunny.
Today my kids and I baked a super delicious carrot cake and to be honest, I'm a big fan of Rüblikuchen in allen Varianten, because these cakes are always so juicy thanks to the freshly grated carrots!
Since Easter is just around the corner, this time we are decorating our carrot cake with a delicious frosting. Using the Easter bunny template (*The template is currently being revised and is therefore unfortunately not available. You can find more DIY templates here) and a few pretty sprinkles we conjure up a colorful Easter bunny on our creamy frosting!

Recipe for a juicy carrot cake with creamy frosting
The recipe for the carrot cake is very simple. The biggest challenge for the minis is separating the eggs and grating the carrots.
I recommend using the plastic bottle trick to separate the eggs. When grating the carrots, there is a chance that your child will injure themselves on the grater, so you should decide whether your child can handle this task on their own or whether you will prepare the carrots.

Ingredients for a sheet cake
Sponge dough
- 150 g margarine
- 150 g brown sugar
- 6 eggs (6 yolks / 6 egg whites)
- 1 pinch of salt
- 200 g ground almonds
- 80g breadcrumbs
- 1 teaspoon cinnamon
- 200 g grated carrots
Frosting
- 250g mascarpone
- 75 g powdered sugar
- 1 packet of vanilla sugar (15g)
- 1 squeeze of lemon
- “Peach” food coloring*
Mini-Tip This amount of frosting creates a fine, thin layer for your carrot cake. If you prefer a rich layer of frosting, you should use double the amount of frosting for your Easter cake.
Decoration
- sugar pearls (I used these sugar pearls*)
Baking accessories
Kitchen scales, 2 mixing bowls, hand mixer, paring knife, kitchen grater, baking tray and baking paper (I used this baking pan*), dough scraper, toothpick, small spoon for spreading the sprinkles

Preparation
Before we can decorate the carrot cake beautifully, we first have to bake it.
We bake a carrot cake
- Cover the baking tray with baking paper or grease the baking tin and set aside.
- Peel the carrots and grate them finely.
- Preheat oven to 160°C top/bottom heat.
- Separate the eggs and beat the egg whites with a pinch of salt until stiff and set aside briefly.
- Mix the margarine with the mixer until creamy
- Add brown sugar and mix well.
- Stir egg yolks into the dough one at a time.
- Add ground almonds, breadcrumbs and cinnamon and stir in.
- Mix the grated carrots with the dough.
- Carefully fold the egg whites into the mixture using the spatula.
- Pour the dough onto the baking tray or into the baking tin and bake for approx. 35-40 minutes (little tip: To check if the cake is completely baked, do the stick test!)

The creamy frosting for our carrot cake
- Beat the mascapone with a hand mixer.
- Add powdered sugar, vanilla sugar and lemon and mix until creamy.
- Pour the frosting onto the cooled carrot cake and spread generously.

We decorate an Easter cake
- Using a toothpick, draw the outline of a bunny head onto the frosting.

- We filled the bunny head with sprinkles. Of course, you can also leave the bunny head “unsprinkled” and sprinkle the “background”. There are no limits to your creativity here!

And you have already baked a really pretty and delicious cake for Easter!
This way you can create the most beautiful “theme cakes”. For a mermaid party, you could also sprinkle a simple sheet cake with our mermaid tail (You can also find the template in the shop).
