Carrot cake for the cakeboard at Easter

Today my minis and I will show you how you and your minis can turn a delicious carrot cake into a colorful cake board with lots of delicacies for Easter.

This year we are conjuring up a special highlight for the Easter table! We tried out our first food board in the form of a candy board for our mini carnival party and got a taste for it. Now for Easter we're making the whole thing Easter-y and creating a delicious cake board with a delicious, juicy carrot cake! The little delicacies on the cake board are ideal for baking with children and an Easter celebration in the smallest circle, as we will probably have again this year.

Ingredients for a carrot cake

The amount of carrot cake is enough for 1 Gugelhupf (diameter 18-20 cm), 12 muffins or 24 mini muffins.

Sponge dough

  • 175 g grated carrots
  • 3 medium eggs (3 yolks/3 egg whites)
  • 120 g sugar
  • 1 packet of vanilla sugar (15g)
  • 1 pinch of salt
  • 50 g (spelled) flour
  • 1 tsp baking powder
  • 300 g ground almonds
  • 2 tbsp orange juice

Baking accessories

Kitchen scales, 2 mixing bowls, hand mixer, kitchen grater, paring knife, dough scraper, oven rack, Bundt cake pan (the baking pans that we used for the cake board are listed below the “Baking accessories list”), cooling rack, ice cream sticks for the cakesicles

Baking molds for our Easter cake board

For the cakeboard, we divided the carrot cake into different baking shapes so that we could offer and decorate a variety of different shapes on our cakeboard). We used the following baking pans:

Preparation

  • Peel & grate carrots
  • Grease baking tins or wash silicone baking tins with cold water (You can find tips for baking in silicone baking molds here)
  • Preheat the oven to 160°C top/bottom heat (fan oven 160°C).
  • Separate the eggs and beat the egg whites with a pinch of salt into egg whites and set aside briefly
  • Beat egg yolks together with sugar and vanilla sugar
  • Stir in all dry ingredients (flour, almonds and baking powder).
  • Stir in grated carrots and orange juice
  • Finally, carefully fold in the egg whites using the spatula
  • Now fill the selected baking tins with the dough and bake. Depending on the size of the baking pan, the baking time varies. The mini cupcakes and mini muffins usually bake for 10-12 minutes, cakesicles and muffins about 20 minutes. In any case, you should do the chopstick test to make sure the pastry is really cooked through.
  • Then let the baked goods cool on the cake rack.

Decorate with a Cakeboard

Instead of cutting the cake into a covered backform and using color, decorate the uncovered cake into a covered cakeboard.

Before you start decorating, many people who spend the night at the Halloween-Beitrag party, in which they do not write there, see the glaze of the Mini-Gugelhüpfer (and also of the Cakesicles) so glatt wird.

Juicy carrots

For decoration you need:

This is how it's done

  • Melt the orange melts in a water bath or in the microwave (according to the instructions) and pour them into the washed Gugelhupf silicone mold. Press the baked mini bundt cakes back into the mold and let them cool.
  • Carefully press the mini bundt cakes with the cooled glaze out of the silicone mold.
  • Melt the green melts in a water bath or in the microwave (according to instructions).
  • Divide the Mikado sticks into three pieces of approximately equal length and turn them in the green melts - so that they are completely covered with the green melts.
  • Carefully press the Mikado stick pieces with the still liquid glaze into the opening of the mini bundt cake and let them dry.
  • For the hemispherical shapes, it is easier to put a small dab of green melts in the middle of the surface of the semicircle, let it dry briefly and carefully fix the green Mikado sticks on the green melts dab. You may need to support them a little with your fingers until the melts are set/dry.

Sweet chicks

For decoration you need:

  • Melt the yellow melts in a water bath or in the microwave (according to the instructions) and add them to the washed Bundt cake silicone mold. Press the baked mini bundt cakes back into the mold and let them cool.
  • Carefully press the mini bundt cakes with the cooled glaze out of the silicone mold.
  • Using a small remainder of the liquid melts (or food glue), attach the chocolate lenses to the bundt cakes as a beak.
  • Finally, use the black sugar stick or chocolate beads to fix the eyes of the little chicks above the beak.

Cute bunnies

For decoration you need:

This is how it's done

  • Melt the pink melts in a water bath or in the microwave (according to instructions).
  • Brush the tip of the heart pink as the bunny’s “mouth.”
  • Melt the white melts in a water bath or in the microwave (according to instructions).
  • Brush the rest of the heart with the white melts.
  • Before the melts dry, place the pink sugar bead in the middle of the heart as a “snub nose”. Two mini marshmallows are fixed under the pearl as “teeth” and three parts of the Mikado sticks are fixed next to the nose as “moustache hairs”.

Colorful cakesicles

For decoration you need:

This is how it's done

  • Melt all the melts separately in a water bath or in the microwave (according to the instructions) and paint the washed Cakesicles baking pan with different colors as desired.
  • Then press the baked Caksicles back into the mold - into the liquid melts - and seal the surface with liquid melts.
  • As soon as the melts are dry, carefully press the cakesicles out of the mold.

Dotted Easter eggs

For decoration you need:

  • Melt all the melts separately in a water bath or in the microwave (according to the instructions) and place them in the washed Gugelhupf silicone mold. Press the baked mini bundt cakes back into the mold and let them cool.
  • Carefully press the mini Bundt cakes out of the mold and dab with liquid melts (we dabbed with the end of a spoon)

The salty-sweet Easter bunny snacks look particularly great on the Easter cakeboard! The instructions for the salty-sweet Easter snacks can also be used wonderfully for sweet gifts from the kitchen for Easter! They make everyone's heart melt 😉
