From Jam poppy seed muffins we made our brightly colored rainbow muffins. But of course you and your minis can also wonderfully transform any other batter into colorful rainbow muffins (the food colors really come into their own in light batter!)

Recipe for brightly colored rainbow muffins
Our recipe for rainbow muffins will definitely bring a good mood into the kitchen! These colorful muffins are wonderful for giving your kids a lot of joy and at the same time introducing them to color theory. Here you can mix and experiment happily, every muffin looks different and each one is beautiful and special in its own way! These brightly colored muffins are an absolute highlight for baking with children!

Ingredients
for 24 muffins (or a loaf tin)
All-in dough
- 300 g flour
- 1/2 packet of baking powder (7 g)
- 100 g sugar
- 1 pinch of salt
- 20 g poppy seeds
- 130 g apricot jam
- 4 eggs
- 200 g soft margarine
- Food coloring in yellow, red, pink, purple, green & blue (My minis and I use Goodbake liquid food coloring*)

Decoration
- Ruby chocolate*
- Colorful decorative letters*
- Wine gum rainbows from Katjes’ “magic bag”*
- Sugar hearts*
Baking accessories
Kitchen scales, mixing bowl, hand mixer, 7 small bowls, teaspoons, dough scraper, muffin tray (we baked some of the dough in heart and donut baking tins - I like to use silicone baking tins for this*), Paper muffin cups*, cooling rack, cooking pot and melting bowl for the water bath
Little tip
If you want to use silicone baking molds, I recommend my “5 tips for baking with silicone baking molds”.

Preparation
- First, you and your kids weigh out all the ingredients for the all-in dough (except for the food coloring), put them in a large mixing bowl and mix them with the hand mixer to form a smooth dough.
- Now heat the oven to 175°C top/bottom heat.
- In the next step, distribute the dough for the rainbow muffins evenly among the small bowls and color the dough in each bowl a rainbow color (we used the following colors: yellow, orange, red, pink, purple, green and blue).
- Your kids can use a small spoon to distribute the colorful dough into the muffin cups as desired. To make the rainbow muffins colorful, you should put 1/2 - 1 spoonful of each color into the molds. We first distributed the yellow dough across all the muffin cups, then moved on to the next color and continued like this until all the colors of dough were distributed across the muffin cups.
- Next, bake the muffins on medium heat for about 15-20 minutes. You can check whether they are baked through using the chopstick test.
- When the rainbow muffins are finished baking, let them cool on the cooling rack (Attention! If you use a silicone baking mold, please let the muffins cool in the mold! For baking with silicone baking molds, I recommend my “5 tips for baking with silicone baking molds”)
- Once the colorful muffins have cooled, you can decorate them to your heart's content. To do this, melt the ruby chocolate in a water bath and pour it onto the muffins with a small spoon and decorate them with colorful treats!
