Would you like to bake protein bread without yeast and without protein powder? Then you’ve come to the right place! This easy protein bread with quark, chickpeas, oats, and a variety of seeds is quick to prepare, wonderfully moist, and perfect not only for breakfast but also as a delicious snack for your children’s lunch box.

My Minis and I are big fans of moist muffins, crispy cookies, and delicious themed cakes. But let’s be honest: As much fun as baking and eating these treats is, we obviously can’t live on them every day.

A balanced diet is very important to me for both my children and me. Don’t get me wrong: We’re not a family that demonizes sugar. Sweets and sweet baked treats are simply part of our lives – just in moderation.

That’s why I think it’s important that my Minis also get to know and enjoy savory and nutritious baking recipes. This is exactly why I created the Lunch Box category here on “Backen mit Minis.” Here you’ll find recipes that I bake for and with my Minis to pack in their school lunch boxes (as of our. healthy chocolate buns, Granola bars, etc.).

There’s one thing that matters most to me: The food shouldn’t just be as nutritious as possible – it should also taste good to the kids. Because what’s the point of the healthiest lunch box snack if it comes home untouched?

Recipe for Our Delicious Protein Bread

Today I’m sharing a quick protein bread recipe without yeast or protein powder that both my Minis enjoy as a school lunch snack and that the whole family loves for breakfast or dinner.

This protein bread gets its high protein content from low-fat quark, cottage cheese, eggs, chickpeas, and a variety of seeds. Oats, flaxseeds, pumpkin seeds, and chia seeds also give the bread a lovely hearty texture.

And the best part: You don’t need either yeast or protein powder.

The bread tastes delicious with both sweet and savory toppings. My Minis, for example, love it with cottage cheese and a little honey. For a savory version, you can top it with egg, avocado, ham, or tomatoes.

Ingredients for Protein Bread

For one loaf:

  • 250 g low-fat quark
  • 50 g cottage cheese
  • 3 eggs
  • 200 g chickpeas
  • 250 g rolled oats
  • 50 g flaxseeds
  • 30 g pumpkin seeds
  • 30 g chia seeds
  • 1 packet of baking powder (15 g)
  • 1 teaspoon salt
  • ½ tsp caraway seeds
  • 150 ml water

Blender or immersion blender, mixing bowl, kitchen scale, loaf pan lined with parchment paper, spatula, cooling rack

How to Make the Protein Bread

The great thing about this protein bread without yeast is that the dough is quick to prepare and doesn’t need any rising time.

  • Preheat the oven to 180°C / 350°F (top and bottom heat).
  • Line a loaf pan with parchment paper.
  • Blend the chickpeas, eggs, cottage cheese, and low-fat quark using an immersion blender (or a regular blender) until smooth.
  • Mix the rolled oats, flaxseeds, pumpkin seeds, chia seeds, baking powder, salt, and caraway seeds in a mixing bowl.
  • Add the chickpea, egg, and quark mixture.
  • Stir in the water and let the dough rest for 10 minutes. This allows the oats to absorb the water and the mixture to thicken. After resting, the dough will be much thicker than cake batter.
  • Transfer the dough to the loaf pan and smooth the surface.
  • For a small crust, you can sprinkle 2–3 tablespoons of oats and seeds over the top.
  • Bake the bread for approximately 60–70 minutes.
  • Once baked, remove the bread from the pan and let it cool completely on a cooling rack.

Mini-Tip Every oven bakes a little differently, so the baking time may vary slightly. If you’re unsure, use a wooden skewer to check whether the bread is fully baked.

The great thing about this easy protein bread is how versatile it is. You can top it with whatever you and your family enjoy.

  • quark and fresh berries

Savory Version

  • ham and cheese
  • hummus and vegetables

We also love serving it alongside a fresh garden salad.

This makes it easy to adapt the bread to your Minis’ preferences while also making it a great school lunch box snack.

How to Store the Protein Bread

The protein bread tastes especially delicious when freshly baked and completely cooled. But you can also prepare it ahead of time and keep it for the next few days.

  • At room temperature: approximately 3–4 days in a bread box or cotton bread bag
  • In the refrigerator: up to approximately 7 days
  • In the freezer: up to 3 months

This makes the bread perfect for meal prep. Simply slice it once it has cooled completely and freeze the slices individually or in portions. That way, you can take individual slices out of the freezer whenever you need them.

Why I Love This Protein Bread for the Lunch Box

For me, this recipe is one of those practical recipes that make family life a little easier. The dough comes together quickly, the bread can be prepared ahead of time, and the individual slices can be topped in all sorts of different ways.

I especially love that this protein bread without yeast or protein powder works equally well for breakfast and for my Minis’ school lunch boxes.

And when the kids say, “Mom, this tastes really good!”, the recipe is definitely a winner in our house.
