We love mangos! So it only makes sense that today we're letting you in on the secret of our delicious mango coconut ice pops! An exotic refreshment for all ages!
We were recently back after a long time in our favorite beer garden in Lüneburg and ate some phenomenal ice cream there! It was so delicious that we unanimously decided to try our hand at recreating this exotic ice cream. And I must admit, we did quite well! Here's the delicious recipe for your exotic summer treat 😉
Recipe for exotic mango coconut ice pops
A little tip right at the start: We refined these ice pops with the ingredient coconut milk. On the second attempt, I used coconut milk from a Tetra Pak rather than a can, and for whatever reason, it tasted even better!

Ingredients for approx. 16 mango coconut ice pops
- 500 g mango (can also be frozen)
- 100 ml coconut milk
- 40 g agave syrup (sweetness is a matter of taste, you can use more or less)
Baking Accesories
Kitchen scales, paring knife, immersion blender or food processor, mixing bowl, tablespoon, measuring cup, board to stabilize the silicone molds in the freezer, freezer, ice pop molds & wooden sticks (I used these molds: Geometric ice pops*, Classic ice pops*, Caterpillar-shaped ice pops* & Bunny ice pops*)
Preparation
- Peel the fresh mango and cut it into pieces or thaw frozen mangoes.
- Puree the mango into a fine puree.
- Add coconut milk and, if desired, agave syrup and puree again.
- Taste to see if the sweetness is right for you!
- Make space in the freezer and place the silicone molds on a stabilizing board.
- Now fill the mango-coconut puree into the ice pop molds and push the wooden sticks into the molds.
- Place the mango coconut ice pops in the freezer for 3-5 hours.
- When the ice pops are thoroughly frozen, carefully remove them from the silicone mold and enjoy!
