Vanilla rainbow cookies – the colorful cookie roll against gray weather

With this gray weather, my kids & I need color! We bake brightly colored rainbow cookies from the roll! The ultimate recipe for baking with children on gray days!

I want to be completely honest with you: the weather here in northern Germany has been too gray for me for weeks! Unfortunately I can't conjure up sunshine and blue skies, but I can ensure that more color comes into our lives! My kids and I bake colorfully! Today we have brightly colored rainbow cookies!

The great thing about the rainbow cookies from the roll is that you can bake them with small children. You can knead and roll and in the end you will create very individual, colorful works of art that bring a lot of color to the table and are fun for more than just the little ones!

Ingredients for approx. 30 rainbow cookies

Baking accessories: Kitchen scales, mixing bowl, hand mixer, kitchen knife, cling film, baking tray, cooling rack, if necessary disposable gloves for kneading in the color

Preparation

  • Put the butter, sugar, vanilla sugar and the pulp of a vanilla pod in a mixing bowl and mix with a hand mixer until fluffy.
  • Add flour, cornstarch, baking soda and salt and knead into a smooth dough.
  • Divide the dough into six equal portions and color each dough portion one color (my minis chose yellow, pink, red, purple, green, and blue. We used 2-3 drops of GoodBake food coloring for each.)
  • Now the colored dough pieces are divided into approx. 8-10 parts each and folded into two approx. 15 cm long partial rolls and rolled tightly (see instructions in pictures).
  • Wrap the two partial rolls in cling film and cool them in the fridge for 30 minutes (this makes them easier to cut afterwards).
  • Before the dough rolls are cut into slices, heat the oven to 180 °C top/bottom heat.
  • Cut the cooled partial rolls into approx. 15 slices per roll and place the slices on a baking tray lined with baking paper.
  • Now bake the rainbow cookies for 15 minutes and then let them cool on a cooling rack. They will continue to harden as they cool. So you can enjoy them crispy!

A little tip: If you store the rainbow cookies in a tin can, they will stay crispy for longer.
