Cutting out cookies is also great fun at Easter time! Today we are baking our favorite Easter cookies with refreshing lemon.
My kids love baking cookies! Knead the dough and cut out small, funny shapes from the rolled out dough. But the highlight is still decorating the cookies with whatever your heart desires - usually sprinkles... tons of sprinkles! 😉
Of course the minis love decorating with sprinkles! But there are other wonderful ways to decorate the cookies! And today my minis and I will show your minis & you two more: marbling with icing & painting with food pens! (Marbling with icing also works wonderfully with Americans - have you heard of our “Marbled Mini Americans”?)
Painting with food coloring is something new for us too! We're trying out how well painting our Easter cookies using food pens works. The little cookie chicks and bunnies are first coated with chocolate and then painted with the food pens. (Royal icing and fondant are also very suitable as a base!)
But first let's bake our favorite Easter cookies:
Our favorite Easter cookie recipe
The refreshing cookie recipe with lemon tastes particularly good in spring and summer!

Ingredients for approx. 30 Easter cookies
Dough
- 150 g margarine
- 80g powdered sugar
- 1 packet of vanilla sugar (15g)
- zest of half an organic lemon
- 1 tbsp milk
- 200 g (spelled) flour
- 75 g cornstarch
- juice of half an organic lemon
Decoration for sugar sprinkle cookies
- Food glue*
- Sugar sprinkles
Decoration for marbled Easter cookies
- powdered sugar
- juice of half a lemon

Kitchen scales, hand mixer, mixing bowl, rolling pin, Easter cookie cutter*, baking tray, baking paper, pastry brush, lemon squeezer, bowl & cooking pot for water bath, toothpick

“Hoppy Easter greetings” – Chocolate Easter chocolates
Do you need a cute little something for your Easter mail? Or would you like to decorate your Easter table with chocolate treats this year?
Then these cute wrappers for your little Easter chocolates are just the thing! These creatively designed Easter chocolates fit perfectly in the mail and add that special something to any Easter nest!
Preparation
- Mix margarine, powdered sugar, vanilla sugar and lemon zest with a hand mixer until foamy.
- Add spelled flour, cornstarch, lemon juice & milk and knead into a smooth dough.
- Put the dough in the fridge for an hour.
- Preheat the oven to 200°C top/bottom heat.
- Roll out the dough to approx. 2 cm and cut out with the cookie cutters of your choice and place on a baking tray lined with baking paper.
- Bake the Easter cookies for about 10-11 minutes and then let them cool on a wire rack.
After they have cooled, the Easter cookies can be decorated however you like!


Three colorful ideas for decorating your Easter cookies
After our favorite Easter cookies have cooled on the cooling rack, they can be decorated however you like. For my minis, this is clearly the highlight of Easter baking - in addition to eating the baked goods! We'll now show you three colorful ideas on how you and your minis can decorate your Easter cookies into a particularly colorful "cookie nest"! Brightly colored Easter sprinkles
Our number one tip is clearly “SPRINKLES”. Even the smallest kids can decorate their cookies into beautiful treats using colorful sprinkles. To do this, the cookie is coated with icing or couverture as desired and sprinkled on top. For the minis, who already have more motor skills, there is a special challenge in creating pretty patterns with the sprinkles. Stripes, dots or other patterns can be added with sprinkles. Food glue is sometimes an advantage for this because it allows you to work more precisely.
Marbled icing
Another very nice decoration for your Easter cookies is the marbled icing. To do this, you and your minis mix icing with powdered sugar and (a little) lemon juice in a small bowl (attention! It shouldn't be too liquid!) Then add a few drops of food coloring to the icing and draw small loops through it with the toothpick Frosting. So that a marbled pattern is created. Now dip the cookie upside down onto the icing and slowly lift it back up, let the icing drip off a little and you'll have the great marble effect! It is best to place the cookies on a cake rack or baking paper to dry.



Colorful food sticks
If your minis love painting as much as mine, the next decoration idea would be something for them:
To do this, brush the Easter cookies with white chocolate or royal icing (here you will find a royal icing recipe) and then paint them with colorful food pens. We have found that painting can be done on chocolate, royal icing and fondant. In our opinion, the food pens paint best on fondant and royal icing.
