Whenever I'm in the mood for a little slice of cake, my absolute favourite is this Wild Berry Galette. It's not only incredibly easy to make, but also wonderfully quick. Perfect!
In fact, just this morning I had one of those moments when I was really craving cake. Really craving it! Yes, I know that might not sound entirely normal to some people, but it happens to me every now and then—even first thing in the morning!
It didn't take me long to decide: this cake craving was definitely calling for a galette!
If you didn't already know, a galette isn't just beautiful to look at—it's wonderfully simple to make and ready to enjoy in no time. I'm a huge fan of these rustic fruit tarts because you can top them with whatever fruit you happen to have at home. Since I always keep frozen mixed berries and raspberries in the freezer, today's choice was an easy one: wild berries.
This Wild Berry Galette is a delicious combination of the tartness of the berries and the subtle sweetness of the crisp pastry edge. One of the things I love most in a cake is the contrast of different textures. The berry filling is wonderfully soft and juicy, while the pastry is crisp and flaky—especially with the toasted almond flakes on top. Mmm... simply delicious! (In fact, while writing this, I had to treat myself to another "small" slice!)

Recipe for Our Wild Berry Galette

As you know, I'm a huge fan of quick and easy recipes—but I never want to compromise on flavour. This Wild Berry Galette is exactly that! Even when baking together with children, it only takes a few extra minutes. Your minis can knead the dough, spread the jam, arrange the berries, and even help fold the edges. Before you know it, your beautiful galette is ready for the oven!
Ingredients
For the Pastry
- 175 g spelt flour
- 70 g margarine (or butter)
- 30 g brown sugar
- 20 g Skyr (or plain yogurt)
For the Filling
- 400 g mixed wild berries (fresh or thawed and well-drained frozen berries)
- 50 g wild berry jam (other jams work beautifully too—I also love making this galette with apricot jam!)
Decoration
- 1 egg yolk
- 1 tbsp milk
- 50 g almond flakes
- Powdered sugar for dusting (optional)
Baking accessories
Mixing bowl, Kitchen scales, Baking tray, Baking paper, Rolling pin, Spoon, Pastry brush, Small sieve, Optional: a cute heart-shaped cookie cutter* for the heart decoration 😉

Preparation
Preheat your oven to 180°C (350°F) top/bottom heat.
While the oven is heating, place all the pastry ingredients into a mixing bowl and knead them into a smooth dough.
Roll the dough into a circle about 0.5 cm thick directly on a baking tray lined with baking paper.

Now your minis can spread the jam evenly over the dough. If you'd like to add a little heart decoration to the edge of your galette, this is the perfect moment to cut it out.
Next, let the children scatter the wild berries over the jam, making sure to leave a 2 cm border around the edge. You'll need this border later to fold over the filling.
Once all the berries are in place, gently fold the outer edge of the pastry over the fruit to create the classic rustic galette shape. If you cut out a pastry heart, simply place it on top of the berry filling as a sweet finishing touch.
Whisk together the egg yolk and milk, then brush the pastry edge with the mixture. Finally, sprinkle the flaked almonds over the edge to give the galette a beautiful golden finish and a lovely crunchy texture.

Bake the galette for 25–30 minutes, or until the pastry is beautifully golden brown. Allow it to cool slightly before dusting it with powdered sugar.
Mini tip: This Wild Berry Galette is absolutely delicious served with a scoop of your favourite vanilla ice cream. 😉
