Mother's Day is just around the corner once again.
For the past few years, I've been celebrating Mother's Day from two different perspectives: as a daughter and as a mum.
Well, to be honest, with two children aged three and four, I'm officially part of the mums' club—but Mother's Day doesn't really mean much to my minis just yet... It certainly does to my own mum though. 😉
Unfortunately, because of the many miles between us, I won't be able to hand over this homemade Mother's Day cake to her in person this year. But perhaps you're lucky enough to live close to your mum and can surprise her with this delicious homemade treat!
A Delicious Mother's Day Gift: Berry Layer Cake with Butter Cookies, Cream & Raspberries
I love the idea of having a special day to celebrate all mothers—and everyone who fills that role in our lives. What I find a little over the top, though, is the huge gift industry surrounding Mother's Day (just like Valentine's Day).
That doesn't mean I don't enjoy giving little presents—quite the opposite! For me, handmade gifts are the most meaningful because they come straight from the heart.
That's why I think a lovingly baked Mother's Day cake is a wonderful way to celebrate this special occasion— even if you can't enjoy it together with the whole family.
And with this fruity, beautiful layer cake, you can even send your mum a heartfelt message.
Recipe for our Butter Cookie Raspberry Layer Cake

This Berry Layer Cake is perfect for baking with children. Each layer comes with its own fun little tasks, making it a wonderful family baking project. As with every cake, your minis can help gather the ingredients, weigh everything out, and stir the mixtures together. My daughter especially loved:
- spreading the cream over the cooled cake,
- decorating the butter cookies together with me,
- and, of course, licking the spatulas (after all, how often do you get cake batter, raspberry filling, and quark cream all at once? 😉)
Ingredients for One Sheet Pan Berry Layer Cake
Dough
- 250 g margarine
- 100 g brown sugar
- 5 tbsp milk
- 4 eggs (size M)
- 300 g flour
- 1/2 packet of baking powder (7 g)
Raspberry Layer
- 750 g raspberries (fresh or frozen)
- 2 packets vanilla pudding powder
- 400 ml water
- 4 tbsp brown sugar
Quark Cream
- 200 g whipping cream
- 500 g quark
- 1 packet whipped cream stabilizer
- 2 packet of vanilla sugar (30g)
Decoration
- 25 butter cookies
- 5 tbsp powdered sugar
- 2–3 tbsp lemon juice
- Red food colouring (GoodBake*)
- Sugar pearls, marshmallows, freeze-dried raspberries, or any decorations you like
- White icing writer

Baking accessories
Sheet pan, Baking paper, Mixing bowl, Hand mixer, Kitchen scales, Rubber spatula, Tablespoon, Small saucepan, Whisk

Preparation
Preheat your oven to 175°C (350°F) top/bottom heat and line a baking tray with baking paper.
Using a hand mixer, beat the margarine, sugar, milk, and eggs together for at least five minutes until the batter becomes light and fluffy.
Mix the flour and baking powder together before adding them to the wet ingredients. Stir just until everything is combined.
Spread the batter evenly onto the prepared baking tray and bake for about 20 minutes. Don't forget to check with a skewer before removing it from the oven.
While the cake is cooling, combine the vanilla pudding powder, water, and brown sugar in a saucepan. Heat gently while stirring until the mixture begins to thicken. Remove the saucepan from the heat and fold in the raspberries.
Spread the warm raspberry pudding mixture evenly over the cooled cake base.
Whip the cream together with the whipped cream stabilizer until stiff. In a separate bowl, stir the quark until smooth before folding in the whipped cream. Spread the finished cream evenly over the cooled raspberry layer.
Finally, arrange the butter cookies on top of the cream. We placed them in five rows of five cookies each. Beforehand, my mini and I decorated the cookies with pink-red icing, freeze-dried raspberries, and sugar pearls. Of course, you can decorate them however you like—gummy bears, chocolate candies, colourful sprinkles... anything your little baker enjoys! We also wrote sweet little messages on the cookies using white icing.
And just like that, your homemade Mother's Day gift is ready: a beautiful Berry Layer Cake with loving messages that truly comes from the heart!
