Halloween-Cupcakes: Kürbis-Cupcakes mit Zimt-Topping (Produkttest: Muffinförmchen RBV Birkmann)

From our delicious pumpkin muffins, today we’re creating Halloween cupcakes. These spooky treats are baked in greaseproof muffin liners. Will it turn out well?

In just under two weeks, things will get truly spooky! Halloween!

My little ones and I have already hollowed out pumpkins and given them creepy faces. So, preparations for Halloween are in full swing! Only one question remains: what to do with all that pumpkin flesh? How else could it be — we bake! Maybe a moist spotted cake or cinnamon pumpkin rolls? Today, it’s pumpkin muffins! And since Halloween is just around the corner, we’ll turn the pumpkin muffins into delicious Halloween cupcakes with a touch of cinnamon topping!

To match Halloween, we’ll bake our Halloween cupcakes in the spooky-sweet Halloween paper muffin liners from RBV Birkmann and test whether the greaseproof paper lives up to its promise! Baking with little ones is perfect for product testing — my minis are especially tough product testers 😉

Recipe for Halloween Cupcakes

You can bake Halloween cupcakes wonderfully together with your kids. Even the smallest minis can already help with full enthusiasm in gathering and mixing the ingredients. In my opinion, there are two challenges in this recipe:

  1. Grating the pumpkin
  2. Piping the cupcake topping

For grating the pumpkin, I recommend using a food processor if you have one. If you’re using a grater, consider whether your minis have the strength and caution to use it safely, as they could get hurt on a grater.

Piping the topping is great fun. My older mini, at five years old, can already manage the piping bag quite well with a little support from me. But if, for example, you don’t have a piping bag or your minis want to decorate the cupcakes on their own, you can always use a spoon to spread the cream. Of course, the cupcakes won’t look as “neat” this way, but your minis may be able to handle this step independently.

Ingredients for 48 Mini Cupcakes

This recipe makes 24 large muffins or 48 mini muffins. For 12 large muffins, simply halve the ingredient amounts. The recipe is also sufficient for a bundt cake.

Muffin batter

  • 400 g grated pumpkin
  • 160 g brown sugar
  • 1 tsp vanilla paste
  • 300 g flour
  • 1 packet of baking powder (15 g)
  • 200 g ground almonds
  • 100 ml orange juice
  • 200 ml sunflower oil
  • 4 eggs
  • Cinnamon

  • Sugar sprinkles

Baking utensils

Muffin tray* (12 large muffins) or mini muffin tray* (24 small muffins), Halloween paper muffin liners (for large Halloween muffins or mini Halloween muffins*), 2 mixing bowls, hand mixer, grater or food processor, measuring cups, kitchen scale, spoon, spatula, cooling rack, 3 small bowls, plastic wrap, piping bag with star tip.

Preparation

Before decorating Halloween cupcakes, we need to bake the little muffins first!

Pumpkin Muffins – The Base for Halloween Cupcakes

  • Line muffin tray with paper muffin liners.
  • Grate the pumpkin.
  • Preheat oven to 160°C (top and bottom heat).
  • Mix dry ingredients (spelt flour, baking powder, ground almonds, sugar, cinnamon) in one bowl.
  • In a second bowl, beat eggs with a mixer and add all wet ingredients (sunflower oil, orange juice, vanilla paste). Mix well.
  • Add dry ingredients to the egg-oil-juice mixture and mix until homogeneous.
  • Fold in grated pumpkin.
  • Using a spoon, distribute the batter into the lined muffin tray.
  • Bake for 25–30 minutes until muffins are done. Check with a toothpick — if no batter sticks, they’re ready!
  • Allow muffins to cool completely on a wire rack before decorating as Halloween cupcakes.

Cinnamon Topping – The Crowning Glory of Halloween Cupcakes

  • Beat the heavy cream, vanilla sugar, and San Apart in a tall bowl until stiff. Chill in fridge.
  • Mix quark, mascarpone, and cinnamon (or paste) in another bowl.
  • Fold whipped cream into quark-mascarpone mixture.
  • Divide mixture into 3 small bowls and color with food coloring (I used orange, green, and purple).
Für den Topping-Swirl wird die Creme für die Halloween-Cupcakes in einer Frischhaltefolie vorbereitet.
  • For the topping swirl, prepare a square of plastic wrap (~30x30 cm). Lay the colored mixtures in three thick stripes next to each other. Fold the plastic wrap over the cream to form a cream roll.
  • Fill the cream roll into the piping bag and pipe on the muffins. Your pumpkin muffins are now delicious Halloween cupcakes!

Today, we baked our Halloween cupcakes in RBV Birkmann greaseproof liners. We were thrilled to see that even after baking, the liners remained vibrant and intact. The paper was dry with no grease marks, and the muffins came out effortlessly. My little testers and I agree: these liners passed the test!

Easy Cake Toppers for Halloween Cupcakes

With beautifully piped topping and special sprinkles, cupcakes are already enchanting. Still, I love cake toppers, so here are two simple Halloween versions.

Edible “Eyeball” Cake Toppers

You’ll need:

Insert the toothpick into the edible eyeball and fix it on the cupcake. Make sure the toothpick is secure, as the topping alone won’t support the eyeball’s weight

DIY Bat Cake Toppers from Paper Muffin Liners

Child-friendly and fun to make with your minis:

You’ll need:

  • 6 popsicle sticks / cake pop sticks
  • 6 paper muffin liners
  • Black construction paper
  • Black marker
  • White marker
  • Scissors
  • Glue

Color the popsicle sticks black, leaving 1 cm at the bottom uncolored. Cut bat ears from black cardstock and attach to the top of the stick. Draw eyes, mouth, and fangs with white marker. Fold paper muffin liners in half to create wings and attach the stick to the center fold. Your bat topper is ready!
