Refreshing no-bake cake: strawberry meets chocolate chip cookie

For the warm summer days, there is a refreshing no-bake cake made from strawberries, yogurt & chocolate chip cookies! A refrigerator cake to melt in your mouth...

It is July and it is getting warmer outside! Although my kids & I are currently trying out many new ice pop recipes to try to cool down our body temperature, we don't want to live without cake completely. For exactly this reason, we have a refreshing no-bake cake for you today!

Last summer we enjoyed mini no-bake cakes in a jar while on the goToday, however, there will be a small refrigerator cake for the Abuela's birthday – my kids Spanish grandmother.

Recipe for our refreshing no-bake cake

This no-bake cake is a wonderful alternative to delicious sponge cake in the summer. The best thing is that you can eat it nice and chilled, straight from the fridge. Almost as refreshing as our beloved ice pops!

Ingredients

Cake base

  • 200 g Cocolate Chip Cookies
  • 75 g butter

Cream

Topping

Baking accessories

Kitchen scales, 2 mixing bowls, high mixing bowl, bowl, hand mixer, 20 cm springform pan or cake plate & cake ring*, rolling pin & freezer bag for crushing the cookies (also works in the food processor), hand blender, dough scraper, kitchen knife

Mini tip: The strawberries can also be easily replaced with other fruits (such as blueberries, raspberries, mango, etc.).

Preparation

  • Before you start with the no-bake cake, get a cake plate and the cake ring to one side. The ring should be stretched to a diameter of 20 cm.

Mini tip: If you don’t have a cake ring on hand, you can also use the ring of a 20 cm springform pan.

  • Now crush the cookies in your food processor (if you don't have one, put the cookies in a freezer bag and crush them by smashing them with a rolling pin).
  • Then put the cookie crumbs in a mixing bowl and add the melted butter. Now mix the two ingredients together to form a smooth mixture. Press this mixture into the prepared cake ring (see instructions in pictures) as a cake base and place it in the fridge to cool.

Now turn your attention to the strawberry yogurt cream.

  • To do this, first wash the strawberries and cut off the green stem. In the next step, put them in a container and puree them finely.
  • In a high mixing bowl, whip the cream together with the vanilla sugar until stiff. Put both the strawberry puree and the whipped cream to one side for a moment.
  • Next, beat the Greek yoghurt with 2 sachets of gelatine (without cooking) according to the instructions on the packet for about 1 minute using a hand mixer. Add the cream and mix the cream again briefly.
  • Now add about a third of the yoghurt cream and another sachet of gelatine to the strawberry puree and stir again for a minute.
  • Now spread the cream on the cake base. To do this, take it out of the fridge and spread the strawberry cream and the yoghurt cream alternately on the cake base. This creates a "cow spot pattern".
  • Once the cream is completely spread on the chocolate cake base, place the no-bake cake in the fridge for about 3-4 hours (preferably overnight).
  • Once the cream has set, run a kitchen knife along the inner edge of the cake ring so that the ring can then be removed from the no-bake cake without any loss.
  • And now you can decorate to your heart's content. My minis and I decorated our no-bake cake with berries.

Mini tip: I can well imagine that this no-bake cake tastes excellent if you spread a few crumbs of chocolate chip cookies on the refrigerator cake in addition to the berries.
