These delicious breakfast muffins are perfect for baking with children! Healthy ingredients & simple steps ensure that your children can easily bake this recipe on their own or with just a little support.

Ingredients for 12 Breakfast Muffins

  • 200 g tender oat flakes
  • 1 teaspoon baking powder
  • 2 tsp cinnamon
  • 1 pinch of salt
  • 240 ml milk
  • 1 egg
  • 80 g maple syrup
  • 80 g blueberries (fresh or frozen)

Baking accessories

Kitchen scale, mixing bowl, fork, tablespoon, muffin liners, cooling rack

We used a silicone baking pan. Here you’ll find all the tips & tricks you should know if you also want to bake your breakfast muffins in a silicone baking pan.

Preparation of the Breakfast Muffins

  • Place all ingredients except the blueberries into a mixing bowl and stir evenly with a fork.
  • Gently fold in the washed blueberries at the end. If you use frozen blueberries, you can add them while still frozen.
  • Preheat the oven to 180°C top/bottom heat.
  • While the oven is preheating, divide the batter evenly among the 12 muffin liners.
  • Bake the breakfast muffins for 25 minutes until lightly golden brown.
  • Once baked, let them cool on a cooling rack. (Important: If you’re using a silicone baking pan like I did, let the muffins cool completely in the silicone pan.)

Storage:
Stored airtight, they stay fresh for 2–3 days. You can also freeze them and thaw as needed.
