For Christmas baking with your children, today we'll tell you our secret for the quickest Christmas cookies: the basic recipe for our cookie rolls and 10 delicious, Christmassy variations.
In recent years we have baked many fun Christmas cookies, such as: the Santa Claus cookies or the funny reindeer cookies with a crunchy nose. But none were as quick and versatile as the recipe for these crispy cookie rolls - the easiest and definitely quickest Christmas cookies.
Our basic recipe for the crispy cookie rolls
The simple basic recipe for the crispy cookie rolls is wonderful for relaxed baking with children in the Christmas bakery. These quickest Christmas cookies can be easily varied with just 1-3 additional ingredients, so you can bake four different types of Christmas cookies from this one basic recipe. My kids and I tested a few ideas for delicious Christmas variations for you.

- 250 g butter
- 180 g sugar
- 1/2 teaspoon salt
- 400 g flour
- 50 g cornstarch
- 2 teespoons baking powder
- 4 tablespoon milk
Ingredients for 10 delicious versions of the quickest Christmas cookies
- Vanilla: 1 packet Bourbon Vanilla (15 g) and Glitter powder* from “GoodBake”
- Hazelnut brittle: 20 g Hazelnut brittle* and 20 g nougat*
- Speculoos: 1 teaspoon speculoos spice and 20 g Chocolate shavings*
- Gingerbread: 1 teaspoon gingerbread spice and 1 tablespoon baking cocoa
- Chocolate-orange: 1 tablespoon baking cocoa, 1 teaspoon orange zest* and Glitter powder* from “GoodBake”
- Marshmallows: 20 g Mini marshmallows* and 10 g golden chocolate balls
- Christmas sugar sprinkles: 20 g Sugar sprinkles*
- Crunchy mix: 20 g Crunchy mix from Dr. Oetker* (chocolate drops and caramel balls)
- Salted caramel: 20 g Caramel drops* and 1/2 teaspoon coarse salt
- Cinnamon: 1 teaspoon cinnamon
Other variations with marzipan, nougat, dried fruits (figs, cranberries,...), pistachios,... are certainly just as delicious. Let your creativity run wild!

Preparation
- Mix flour, cornstarch & baking powder in a bowl.
- Mix butter, sugar and salt in a mixing bowl using the dough hook or your hands.
- Add the flour/starch mixture and milk and knead into a smooth dough.
- Divide the dough into four equal pieces of dough and mix each quarter with the ingredients of one variant.
- Roll up each cookie dough variant into a roll (approx. 25 cm long and 4 cm in diameter) and cover with cling film. Let the dough rolls cool in the refrigerator for at least 1 hour. (Don't be surprised, the dough rolls are very hard afterwards).
- Preheat the top/bottom heat to 185°C.
- Using a sharp kitchen knife, cut the dough rolls into slices approx. 1 cm thick, place them on a baking tray lined with baking paper and bake on the middle rack for 12-14 minutes. The cookies shouldn't get too brown.
- Then let the cookies cool for 5 minutes on the baking tray and completely on the cooling rack.

My kids and I had a lot of fun trying out different variations for the quickest Christmas cookies. Of course, we had to have a little cookie tasting dinner afterwards too!
