Quick no-bake granola bars: a healthy lunchbox recipe with oats, nuts & dates – perfect for kids & meal prep.
After the protein-rich granola bars and the delicious chocolate rolls, today I’m wrapping up our small recipe series “Healthy Snacks for the Lunchbox” with these simple no-bake granola bars.
Granola bars without baking? Of course! The warm maple syrup binds the healthy mix of grains perfectly into a delicious granola bar.
A variety of nuts and flakes provide a great crunch and supply valuable, healthy fats. Dates and maple syrup add natural sweetness to the kids’ lunchbox – completely without industrial sugar.
This is how healthy granola bars for your children are created, perfect for school, kindergarten, or as an afternoon snack.
Recipe for Quick No-Bake Granola Bars
This no-bake granola bar recipe is super quick, as it completely skips the oven. At the same time, it’s a great recipe that your little ones can make independently, since the ingredients only need to be mixed together. Depending on your children’s age, they may need help heating the syrup–nut butter mixture or later cutting the mixture into individual granola bars.

Ingredients for Quick Granola Bars
makes about 16 granola bars
- 200 g dates
- 50 g chopped almonds
- 50 g chopped peanuts
- 100 g oat flakes
- 80 g spelt flakes
- 35 g chopped pistachios
- 40 g flaxseeds
- 40 g chocolate drops
- 1 teaspoon cinnamon
- 80 g maple syrup
- 70 g peanut butter
Baking Accesories
Kitchen scale, food processor, saucepan, tablespoon, mixing bowl, baking pan or casserole dish lined with baking paper, bread knife, cutting board

Preparation – No-Bake Granola Bars
- Place the dates in a food processor, chop them finely, and add them to a mixing bowl.
- Add all remaining ingredients except the maple syrup and the nut butter to the mixing bowl.
- Heat the maple syrup and nut butter in a saucepan until a smooth, homogeneous mixture forms. Add this to the mixing bowl as well and mix all ingredients thoroughly.
- Transfer the mixture for the quick granola bars into the baking dish lined with baking paper, press it down firmly with damp hands or a spoon, and refrigerate for 15 minutes.
- Finally, cut the chilled, firm granola slab into evenly sized granola bars using a knife.
And your quick granola bars are ready – completely without baking!
