Cookies for Easter? Of course, we're going to show you our favorite Easter cookies today - refreshing, cuddling lemon bunnies.
We have been back from Spain for 10 days. As we do after every visit to my in-laws, we bring a bulging bag of juicy, fragrant lemons from the abuela's garden home with us. These lemons are the most flavorful I've ever tasted! That's why we only use them for very special treats: like these little lemon bunnies.
Easter cookies are always welcome!
Our cookie jars have been yawning empty since Christmas. It's time we change that. Since the Easter Bunny will be hopping through our gardens shortly, now is exactly the right time for a cookie baking campaign! My kids immediately come up with a great idea for what we could use one of the most sacred lemons for: lemon cookies! They are a wonderfully refreshing treat, especially in spring and summer!
And to make the delicious lemon cookies a very special highlight for the Easter season, we cut out lots of little cuddly bunnies with the Cookie cutters “Cuddly biscuit, bunny” from RBV Birkmann* .

Do you need a cute little something for your Easter mail? Or would you like to decorate your Easter table with chocolate treats this year?

Once you start using the Knuddle cookie cutter, you definitely won't be able to stop. There are so many possibilities for decorating here. Great fun for young and old.
My kids also gave all their creativity. But see for yourself!
The cuddly bunny with Easter egg
The best-known variant - the classic - is probably the cuddly bunny with a colorful Easter egg in its arms.

A sweet Easter message
Of course, our little lemon bunny can not only hold an Easter egg, but also a flag made from cardboard and toothpicks. This can ideally be labeled as a small “Easter message”. A sweet present or name tag for your Easter brunch.

Lemon bunny lollies
My personal favorite is the cuddly bunny lollipop! It can also be used as a cake topper or as an Easter present. My kids particularly liked this version.
Little tip: Before the cuddly bunnies are baked, the cake pop sticks should already be fixed, otherwise the cuddly bunny can break when the sticks are stuck.

The little coffee snack
For all coffee lovers, the next cuddly bunny is a funny idea - he looks curiously over the edge of the coffee cup. To do this, the arms of the cuddly bunny must be shaped slightly forward while baking.
Little tip: Since the arms “move" back into their original shape during the baking process, I fixed the dough arms with aluminum foil.

Easter table decoration
Unfortunately, I had to use plastic straws for the drink topper because they are more flexible than paper straws. This made it easier for me to push them through the arms after the baking process.
I'm honestly not sure if paper straws can withstand the heat of baking or catch fire. That's why I didn't try it... If you - like me - want to be on the safe side, put a placeholder, e.g. aluminum foil, with the diameter of the straw under the arms when baking.

Once you have decided on one or more cuddly bunny variants, we can start baking! 🙂Here we go - the yummy recipe!
Recipe for lemon bunnies to cuddle

I don't have to tell any parent that baking cookies is particularly popular with children. Here you can have fun to the fullest: Weigh out the ingredients and best of all, then mash them up 🙂 My children also have a lot of fun rolling the dough out and cutting the cookies out every time! And finally, of course, decorating the delicious bunnies! An all-round great baking campaign for the minis and you!
Ingredients for approx. 20 bunnies
Dough
- 250 g flour
- 1 tsp baking powder
- 75 g brown sugar
- 1 egg
- 125 g butter
- 1 packet of vanilla sugar (15g)
- 1 pinch of salt
- 2 tbsp lemon juice
- Zest of an organic lemon
Decoration
- 100g powdered sugar
- 2 tbsp lemon juice
- Sugar sticks of any color (I used pink, turquoise and white)
- Sugar Sweeties “Sugar Pearls Pink” by RBV Birkmann
- Sugar Sweeties “Sugar Decor Flowers” by RBV Birkmann

Baking accessories
Mixing bowl, scales, baking tray, baking paper, rolling pin, knife, cookie cutter, cake rack
Preparation
- Mix all the ingredients for the dough together and knead well. Then let the dough rest in the refrigerator for 30 minutes.
- After the resting time, flour the work surface and roll out the dough thinly with a rolling pin
- Cut out the cuddly bunnies and, depending on which variant you have chosen, shape the bunny or press the “dough Easter egg” etc. into the arms.
- Bake the bunnies in a preheated oven at 160 ºC (top/bottom heat) for 10-15 minutes.
- After baking, the cookies must cool on a rack.
- For the icing, mix together the lemon juice and powdered sugar to create a thick icing (Mini tip: to prevent the icing from becoming too thin, mix the lemon juice into the powdered sugar, teaspoonful at a time)
- Spread the icing over the cooled bunnies and decorate them with the sugar decorations as desired.
And hoop hoop, the lemon bunnies are ready!
