Recipe for Our Ultimate Easter Cake
This cake decoration is great fun for the minis. Even the youngest can happily spread white blobs over the cake, which are then turned into cute “fried eggs” with yellow cake melt drops.
Your minis may need a bit of help grating the carrots and chopping the walnuts. For the safety of little hands, you’ll find some tips and tricks in this blog post.

Ingredients for the Carrot Cake with Fried Egg Glaze
Sponge dough
- 250 g carrots
- 150 g walnuts
- 150 g sugar
- 1 packet of vanilla sugar (15g)
- 3 eggs
- 175 ml sunflower oil
- 80 g yogurt
- 2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 250 g flour

Baking accessories
Kitchen scale, mixing bowl, hand mixer, grater, peeler, cutting board & knife, spatula, loaf pan, baking paper, cooling rack, heatproof bowl & saucepan, pastry brush, teaspoon

Preparation of the Carrot Cake
First, we bake the carrot cake:
- Peel the carrots and grate them using a kitchen grater, then finely chop the walnuts.
- Preheat the oven to 175°C (fan oven).
- Add sugar, vanilla sugar, eggs, oil, yogurt, cinnamon, nutmeg, and salt to a mixing bowl and mix well with a hand mixer.
- Combine baking powder with spelt flour and stir into the batter.
- Finally, gently fold in the grated carrots and chopped walnuts using a spatula.
- Line a loaf pan with baking paper (or grease it with butter or margarine) and pour in the batter.
- Bake the cake for about 40–45 minutes until golden brown. Since ovens vary, I recommend doing the toothpick test.!
- Remove the finished cake from the pan and let it cool on a wire rack.
Now we turn the carrot cake into the ultimate Easter cake:
- Melt the dark chocolate in the microwave or over a water bath and spread it over the cake with a pastry brush.
- Once the dark chocolate has set, melt the white glaze and spoon small white patches onto the cake – these represent the egg whites. Place one yellow cake melt drop on each white patch to create the yolk. Once the glaze has dried, the ultimate Easter cake is ready to serve!
