Banana bread is always a good idea! Now during the Christmas season, my kids & I are baking our delicious Christmas banana bread with Christmas spices.
Every now and then we have very ripe bananas left over and you can conjure up many delicious things with them. But in my opinion the best thing is and always will be a good banana bread! We always like to eat banana bread. Now for the coming Christmas season it willtaste like Christmas. The recipe for our Christmas banana bread is a delicious mix of healthy banana bread and a crunchy Christmas topping! THE banana bread for the Christmas season!

Recipe for our Christmas banana bread
Our Christmas banana bread can be baked very quickly with the help of your kids. Because it's so quick and easy to bake, the kids can actively support you with every step of the process. Perfect! The minis can mash the ripe bananas with the fork, or even with their little hands if necessary 🙂 (trust me, they'll find it squeaky 😉). As with any batter, the minis can also weigh out the ingredients, stir them and then pour the batter into the greased loaf pan.
Little tip: Bananas are ideal for teaching children how to use a knife, as they can be easily cut with a dull knife.

Ingredients for a loaf pan
- 4 very ripe bananas
- 2 eggs
- 80 ml sunflower oil
- 100 g agave syrup
- 100 g oat flakes (I mix tender and granular 1:1)
- 250 g flour
- 60 ml milk
- 2 tsp baking powder
- 1 packet of bourbon vanilla sugar (15 g)
- 1 heaped tsp Just Spices “Banana Bread Spice”*
- 1 tsp Spekulatius Spice*
- 8 butter speculoos
- 50 g chocolate chunks
- 2 tsp cinnamon
- 1 pinch of salt
Baking accessories
Mixing bowl, small bowl, hand mixer, dough scraper, fork, teaspoon, cooling rack, loaf pan*

Preparation
- Before you mix the dough together, preheat the oven to 180°C top/bottom heat.
- First, use your minis to mash the ripe bananas with a fork into a pulp. Little tip: If you cut one of the four bananas into small cubes, the banana bread will taste even more “bananay” 😉
- After the bananas are mashed, beat the eggs in a separate bowl with the mixer until fluffy.
- Then add the mashed bananas, oil and agave syrup to the egg mixture and mix the ingredients until smooth.
- Now add all the dry ingredients (flour, oat flakes, baking powder, banana bread & speculoos spice, salt, cinnamon & vanilla sugar) to the mixture and mix them very well with the mixer.
- Stir in the milk at the end to make the dough smoother.
- For a delicious Christmas crunch, crumble the butter speculoos and add it to the dough along with the choco chunks and fold in. For a crunchy topping you should reserve 3 tablespoons of the crunch.
- Now the dough is placed in the greased loaf pan and sprinkled with the speculoos chocolate topping. Fantastic!
- And now, into the oven! Bake your Christmas banana bread for about 50 minutes on the middle rack. (Don’t forget to do the toothpick test, as every oven bakes differently 😉)
- When the Christmas banana bread is finished baking, let it cool in the baking tin for 10 minutes before removing it from the tin and letting it cool completely on a cooling rack.
