Sweet Strawberry Rolls for Mother’s Day

The start of strawberry season is just around the corner: the perfect time to bake juicy strawberry rolls for Mother’s Day for our special loved ones.

Mother’s Day is coming up again on Sunday!

A day dedicated to the person we sometimes take far too much for granted: our mother! selbstverständlich hinnehmen: unsere Mutter!

The person who carried us through the nights as babies, who held our hand tightly on our first day of kindergarten, who surprised us every year with our favourite birthday cake, and who gave us the most beautiful school cone on our first day of school, only shrugging when we started slamming doors at 13. It is also the person who wiped away our tears during our first heartbreak and stood proudly behind us at graduation, and who lovingly supported us as we moved into our first own apartment.

This day is for the women who are always there for us, no matter when or where. It is for the person for whom we will always be “her minis”, even though she now lovingly takes care of our own children.

This day is for all women who, in one way or another, have taken on the role of a mother in a child’s life with passion and devotion. This role is so multifaceted that it is only logical that it can be filled by many different personalities. In my opinion, you don’t necessarily have to have given birth to children—what matters most is a big heart full of understanding, love, and care. 🙂

For me, it is exciting and beautiful to now experience motherhood from a new perspective—the mother’s perspective—for a few years. It is not always easy to find the right balance between upbringing and relationship, but I am sure my children and I will handle the challenges of “mom life” together—with lots of love, coffee, and these delicious strawberry rolls—not only for Mother’s Day 😉 (You can find more delicious Mother’s Day ideas here.)

Strawberry rolls with vanilla filling

Although it may not seem like it at first glance, this delicious strawberry cake can also be baked with the help of children. My minis not only helped me knead the dough (even though it was quite sticky at the beginning), but also lovingly cut the strawberries and spread them with the pudding over the yeast dough rectangle. My older daughter then skillfully placed the dough rolls into the heart-shaped baking tin, which she had previously greased with a brush. In this way, these strawberry rolls became a beautiful joint project between my mini and me for Mother’s Day!

Ingredients 

Dough

  • 250 g flour
  • 1/2 cube fresh yeast (12 g)
  • 100 ml lukewarm milk
  • 50 g brown sugar
  • 40 g soft butter
  • 1 egg
  • 1 pinch of salt

Filling

  • 100 g fresh strawberries
  • 250 ml milk
  • 20 g brown sugar
  • 1/2 packet vanilla pudding powder
  • 80 g quark

Icing

  • 1 tbsp freshly squeezed lemon juice (or alternatively 2 tbsp strawberry purée or strawberry juice for a nice red colour 🙂)
  • 2 tbsp powdered sugar

Baking accessories

Scale, mixing bowl, dough hook (or hands), sharp knife, cutting board, saucepan, measuring jug, whisk, heart-shaped baking tin*, brush

Preparation 

Before we can roll the buns, we first need a soft yeast dough!

Yeast dough is the base for the strawberry rolls

First, mix yeast, sugar and milk and let it rest for 10 minutes (until the yeast starts to form small bubbles).

Next, add the remaining dough ingredients to the yeast-milk-sugar mixture and knead until you get a smooth dough that no longer sticks to the bowl. Then let the dough rest again for 30 minutes in a warm place.

Is your yeast dough not rising or sticking to your fingers?

Then I can reassure you: you are not alone! Many people have the same issues and it was the same for me for a long time!

After many experiments and a lot of testing, my yeast doughs now usually rise! With my tips & tricks for baking with yeast dough your baking with yeast will also be a pleasure and your yeast dough will rise!

Filling & rolling the strawberry rolls

During the resting time, wash and dice the strawberries with your minis. Prepare the pudding according to the instructions using milk, sugar and pudding powder, then let it cool slightly. Once slightly cooled, fold in the quark.

Roll out the yeast dough on a floured surface into a rectangle of about 40 × 30 cm. Your mini can now spread the vanilla cream over the dough. Before doing so, make sure to stir the cream until smooth again. After that, your mini spreads the strawberry pieces over the pudding.

Cut the dough rectangle, now covered with filling, into strips along the long side (about 15–20 strips). Roll up each strip and place it into the greased baking tin (cut side facing up). Continue placing the rolls next to each other until the tin is completely filled.

Into the oven!

Preheat the oven to 200°C top/bottom heat and bake the strawberry rolls on the middle rack.

The strawberry heart needs about 20–30 minutes in the oven. To check if it is done, use the skewer test.

While the rolls cool on a rack, prepare the icing with your mini. (mini tip: add lemon juice drop by drop, otherwise the icing becomes too runny!)

Finally, drizzle the icing over the heart-shaped bake with a spoon.
