Today, my kids and I are giving the classic “Russian Plucked Cake” a spooky twist! An easy cheesecake recipe perfect for Halloween!

A well-known cake classic like the Russian Plucked Cake doesn’t have to be old-fashioned and boring. On the contrary, you can modernize it especially for Halloween with a few cookie cutters and food coloring—and at the same time get the little ones ready for the upcoming cookie-baking season in a few weeks! 😉

The creepy night of all nights is slowly but surely approaching… soon we’ll be surrounded by bloodthirsty vampires, eerie monsters, and haunting ghosts: Halloween! Let the spookiness begin!

Of course, things have to get a little spookier in our little home baking studio…!

After already baking little hairy spider muffins and colorful, multi-eyed monster cookies for the Halloween dessert table, today a swarm of bats will fly across our dessert table—more precisely, across our Russian Plucked Cake!

My kids are always thrilled when we bake cookies and get super excited when they can cut out funny shapes from the dough... Today, I only “pretended” to bake cookies, but my kids still had great fun cutting out shapes, and the result will definitely give you the creeps!

A Russian Plucked Cake offers some exciting tasks for the little ones. Especially our newly interpreted Halloween-themed plucked cake usually delights the kids, as they get to cut out “cookies”! Ingredients for a Russian Plucked Cake (20 cm springform pan)

Dough

  • 150 g spelled flour
  •  20 g baking cocoa
  • 1 teaspoon baking powder
  • 60 g brown sugar
  • 1/2 packet of vanilla sugar (7g)
  • 1 egg
  • 75 g butter

Filling

  • 60 g brown sugar
  • 2 eggs
  • 250 g quark
  • 100 g vanilla skyr (neutral flavor also works)
  • 1/2 packet of vanilla sugar (7g)
  • 1 pinch of salt
  • 30 g butter
  • Orange food coloring from GoodBake*

  • White sugar icing pen

Preparation

A Russian Plucked Cake can be divided perfectly into at least two steps when baking with children. You can make the shortcrust dough with your little one the day before, store it overnight in the fridge, and bake the Halloween-themed Russian Plucked Cake the next day.

The shortcrust dough for the Russian Plucked Cake

First, preheat the oven to 180°C (top and bottom heat) and let your little one line the springform pan with parchment paper and/or grease it.

Mix all the dry ingredients for the dough, then add the egg and butter and knead well with your child. Set aside a quarter of the dough for the “Halloween decoration.” With the rest of the dough, you and your little one line the bottom and sides of the springform pan to give the cheesecake stability.

Creamy cheesecake filling

For the filling, first whip the butter with a mixer in a mixing bowl until frothy. Then let your little one add the sugar to the frothy butter. Next come the eggs. To avoid eggshells getting into the batter, let your child crack the eggs into a small separate bowl first. Then mix well with the butter-sugar mixture. For a delicious cheesecake, add quark, skyr, vanilla sugar, and salt. After mixing all the filling ingredients well, pour the cream into the dough-lined springform pan.

A cheesecake turns into a Halloween highlight

Now comes the especially fun part for the kids. Using the reserved dough, your little one cuts out bats (or other Halloween-appropriate shapes). These are placed on top of the cheesecake filling (the “unplucked” pieces of the Russian Plucked Cake 😉).

Now put the cake in the oven and bake it at 180°C for about 35-45 minutes. Please do a toothpick test to ensure the Russian Plucked Cake is fully baked.

When the cake has cooled, you can finish by painting bat eyes on the little bat faces with the white sugar icing pen. But even without eyes, this Russian Plucked Cake offers a wonderfully spooky sight at Halloween!
