Our fairytale cake buffet for my little one's birthday is decorated with these elf-like mini muffins with delicious mushrooms. A sweet eye-catcher for our fairytale party.
For my kid’s fairytale party, I put together lots of little treats that can be eaten in one go. So, in addition to the absolutely cute frog prince cake pops (I am still extremely in love with the little treats), and we of course made muffins: mini-muffins!
Our elf-like mini muffins are made from a simple all-in-one batter. I used ground almonds for this one, but you can easily replace them with hazelnuts (if you have allergies or something similar).
Recipe for our elfish mini muffins
This recipe is simply perfect for baking beginners or small children, as all the ingredients for the batter can simply be put into the bowl and then mixed together – a classic All-in dough!

Ingredients for 24 mini muffins
Sponge dough
- 180 g margarine
- 3 eggs (M)
- 180 g sugar
- 180 g (spelled) flour
- 1 teaspoon baking powder
- 100 g ground almonds
- 1 packet of vanilla sugar (15g)
- 50 g white grated chocolate
- 50 ml milk
- 24 mini muffin cups*
Decoration
- pink, orange, pink sugar sprinkles*
- 24-48 foam sugar mushrooms*
- 100 g ruby chocolate* (we use the Happy Melts Ruby-Chocolate* from GoodBake )

Baking accessories
Kitchen scales, mixing bowl, hand mixer, mini muffin baking tray*, dough scraper, 2 teaspoons, cooling rack, saucepan and bowl for melting the chocolate, pastry brush

Preparation
- Preheat the oven to 175°C top/bottom heat.
- Prepare the muffin tray and line it with the paper cups.
Mini-Tip Before you put the paper cases into the muffin tray, fill the muffin tray with a few uncooked grains of rice. The rice grains will absorb any fat that might leak out, preventing the paper cases from getting damp during baking. Not all paper cases are “grease-proof”. Please see our product test of the greaseproof muffin tins.
- Put all ingredients in the mixing bowl and mix into a smooth dough.
- Use a teaspoon to fill the dough into the paper cases and bake the mini muffins for about 10-12 minutes at 175°C. To determine whether the mini muffins are baked through, please do a toothpick test.
- While the muffins are cooling, melt the ruby chocolate in a water bath together with your minis. Make sure that no water mixes with the chocolate, as this could cause it to clump.
- Your kids can now dip the mini muffins "upside down" into the ruby chocolate or spread the liquid chocolate on the muffins with a pastry brush and decorate as desired. We sprinkled each muffin with sugar sprinkles and decorated with 1-2 foam sugar mushrooms.
