Today we're baking the perfect Easter cookies: Crispy Carrot-Walnut-Cookies with chocolate chips! A delicious treat for Easter! The Easter Bunny will love them too!
Just like the Christmas season, the time before Easter offers many opportunities to be creative with children – and my little ones and I love taking advantage of them! My kids and I enjoy crafting and baking little Easter gifts and decorating the house for Easter. From cute banderoles for Easter chocolates up to beautifully decorated Easter cookies – we're enjoying the Easter season to the fullest! But now finally, let's get to the delicious cookies! We love these round biscuits and try all the flavors. The colorful "Springy Easter cookieswe baked two years ago for Easter. This year we're going all Easter-y and baking juicy carrots into the cookies! It's so delicious! ...and honestly, what's better for Easter than carrots? 😉
Recipe for our Easter Carrot-Walnut-Cookies
This simple recipe for Carrot-Walnut-Cookies is perfect for baking with your kids. The dough is quick to make. The only real challenge for your little ones might be grating the carrots. If grating the carrots is too dangerous for your little ones, you can do it yourself and have them prepared for the kids.

Ingredients for about 12 Carrot-Walnut-Cookies
- 100 g chopped walnuts
- 180 g carrots
- 250 g flour
- 100 g oat flakes
- 1 teaspoon baking powder
- 150 g soft butter
- 70 g brown sugar
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 50 g white chocolate chunks*

Kitchen scales, cutting board, kitchen knife, fine sieve, peeler, grater, bowl, mixing bowl, hand mixer, dough scraper, 2 teaspoons, baking tray, baking paper, cooling rack

“Hoppy Easter greetings” – Chocolate Easter chocolates
Do you need a cute little something for your Easter mail? Or would you like to decorate your Easter table with chocolate treats this year?
Then these cute wrappers for your little Easter chocolates are just the thing! These creatively designed Easter chocolates fit perfectly in the mail and add that special something to any Easter nest!
Preparation
- Roughly chop the walnuts with a knife
- Peel and finely grate carrots
- Preheat the oven to 170°C top/bottom heat
- Mix spelt flour, oat flakes & baking powder in a bowl
- Mix soft butter and sugar with a hand mixer until the sugar has dissolved (mix for about 2-3 minutes)
- Add vanilla extract and cinnamon and beat again
- Briefly stir the flour, oatmeal, and baking powder mixture into the batter. Don't panic, the batter will still look very crumbly. This will change once the carrots are mixed in.
- Fold grated carrots, chopped walnuts and chocolate chunks evenly into the cookie dough using a spatula
- Form two teaspoons of dough into a ball with your hands and place it on a baking tray lined with baking paper, leaving about 3 cm between each ball. (Little tip(Note: no more than 9 Carrot-Walnut Cookies per baking sheet, so they bake evenly without sticking together.)
- Bake the carrot and walnut cookies for about 25 minutes at 170°C. Since ovens vary in baking time, you should check the oven after 20 minutes: if the cookies are golden brown and look crispy, they're ready to take out. Even if they still look raw in the middle, they'll continue to bake outside of the oven and will be just right 😉
- After the carrot-walnut cookies have cooled on the baking sheet outside the oven for about 5 minutes, carefully lift them onto a cooling rack and place a small chocolate bunny or chocolate egg in the center of the cookie as a decoration. The warmth of the cookie will melt the chocolate slightly, and the chocolate bunny will be fixed to the cookie. A delicious little decorative highlight.Alternative: You can, of course, also fix the chocolate bunnies and eggs with a little melted chocolate after the cookies have cooled. This won't detract from the decoration; you'll just have to melt some more chocolate afterwards.
- Let the cookies cool thoroughly on a cooling rack, then store them in a tin and separate the individual cookie layers with baking paper or eat them right away. 😉
