Recipe for Our Ultimate Halloween Cake

(for a 26 cm / 10 inch springform pan)

  • 200 g margarine or butter
  • 200 g dark chocolate
  • 3 eggs
  • 225 g sugar
  • 1 packet of vanilla sugar (15g)
  • 1 pinch of salt
  • 300 g flour
  • 1 packet of baking powder (15 g)
  • 40 g baking cacoa
  • 200 g yogurt
  • 50 g espresso (alternative: milk)

Baking accessories

26 cm springform pan, kitchen scale, mixing bowl, hand mixer, cutting board & knife, saucepan & melting bowl, fine sieve, cooling rack, spatula

Preparation

  • Grease the springform pan with butter and dust it with cocoa powder.
  • Preheat the oven to 170°C (340°F) fan setting.
  • Chop the chocolate and melt it together with the margarine (or butter) in a water bath.
  • In a mixing bowl, beat eggs, sugar, vanilla sugar, and salt for 2–3 minutes until pale and creamy.
  • Mix flour, cocoa, and baking powder and sift into the egg-sugar mixture.
  • Add espresso (or milk) and yogurt, and stir gently.
  • Finally, fold in the melted chocolate mixture until smooth.
  • Pour the batter into the prepared pan and bake for about 50 minutes at 170°C (340°F).
  • After about 45 minutes, do a toothpick test. The cake should still be slightly moist inside – if the stick comes out completely clean, it’s a bit overbaked and may be dry.
  • Let the cake cool completely in the pan. Once cooled, remove it from the pan and either serve right away or cover it with a clean kitchen towel and let it rest at room temperature.

At our house, the Minis and I let the cake sit overnight under a towel so that we can decorate it the next day into a spooky Halloween cake!

Spooky Ghost Decoration for Our Halloween Cake

Make your little rice paper ghosts at least one day before you decorate the cake.

Materials

  • 3 sheets of rice paper (you may need 2–3 extra)
  • Black felt-tip pen
  • Aluminum foil

This is how it's done

  • Shape three ghost molds out of aluminum foil. Ours are about 7–10 cm tall. Make sure the “head” area of each ghost is rounded.
  • Dampen the rice paper with water until it becomes soft and flexible, then carefully drape it over the foil forms. Don’t soak it too long – it can become too slippery and tear easily. Try to align the lower edges evenly.
  • Let the rice paper ghosts dry and harden overnight.
  • Once dry, carefully remove the foil and draw eyes on the ghosts using a black felt-tip pen.

Done! Your spooky cake decoration is ready!

Mini-Tip The ghosts look especially spooky when you place them over a battery-operated tealight so they glow from the inside. My Minis and I love it!
