Nutty Easter bunny - Yeast pastries for Easter

Easter without yeast pastries? Unthinkable! My minis & I are baking a stuffed nut and yeast plait for the Easter food blog parade, which comes hopping along like a bunny!

The Easter Bunny is coming next week and many people are having a big Easter brunch with the whole family to celebrate its visit. For this lovely event, my kids & I teamed up with some creative food bloggers again and put together sweet baking inspiration for your loved ones & you for your Easter table.

Easter, or rather the visit of the Easter Bunny, is of course an exciting event at home that we like to bake for. Like at Christmas sweet Easter cookies are not missing at Easter either, but our juicy carrot cake is also very popular. Particularly funny as a little Easter souvenir are our cute Easter bunny snouts as a little crunchy snack.

Then I can reassure you: you are not alone! Many people have the same issues and it was the same for me for a long time!

After many experiments and a lot of testing, my yeast doughs now usually rise! With my tips & tricks for baking with yeast dough your baking with yeast will also be a pleasure and your yeast dough will rise!

For this blog parade, my kids and I baked a nutty Easter bunny. A classic that cannot be missed at our German-Spanish Easter (just like Spanish Torrijas). Today's Easter pastry doesn't come along in the classic form of a yeast pastry, but rather as a cute Easter bunny!

Recipe for our Nutty Easter Bunny - Yeast pastry

Some people have a lot of respect for the yeast dough - but I'll give you a few tips so that you can be well prepared and dare to make the delicious yeast pastry for Easter with your kids😉

Ingredients

Yeast dough

  • 70 g butter
  • 220 ml milk
  • 500 g (spelled) flour
  • 7 g dry yeast (1 packet)
  • 15 g sugar
  • 1 pinch of salt
  • 1 egg + 1 egg white

Filling

  • 1 egg + 1 egg yolk
  • 80 ml milk (+ 3 tbsp milk for brushing)
  • 200 g ground hazelnuts
  • 100 g chopped hazelnuts
  • 40 g sugar

Zuckerguss

  • 50g powdered sugar
  • 2 tbsp milk

Baking accessories

Kitchen scales, measuring cup, saucepan, whisk, tablespoon, 2 mixing bowls, drying cloth, rolling pin, sharp kitchen knife, bowl, pastry brush, baking tray, baking paper, cooling rack (My minis and I use these baking accessories)

Preparation

For the yeast braid we first make a fluffy yeast dough. In the next step we conjure up the nutty filling and in the last step we combine the two delicacies into a pretty braid.

Preparation of the yeast dough

  • Heat the milk in the saucepan and melt the butter in it (do not bring it to the boil).
  • Mix flour, sugar, dry yeast & salt in a mixing bowl with a spoon.
  • Add a whole egg and the white of another egg to the mixing bowl.
  • Finally, give handwarm the butter-milk mixture to the ingredients in the mixing bowl (note: the butter-milk mixture may not be hot !!!) and knead it with the dough hook or your hands for about 3-4 minutes to form a smooth dough.
  • Then cover the bowl with the yeast dough with a drying cloth and let the dough rise in a warm place for about 30 minutes (during this time it should increase in size significantly!)

Preparation of the nut filling

  • While the yeast dough is rising, you and your minis can devote themselves to the nut filling. To do this, put a whole egg and the remaining egg yolk, as well as milk, chopped and ground hazelnuts and the sugar in a mixing bowl and mix the ingredients with a tablespoon.

Forming the yeast braid bunny

  • After the yeast dough has rested and increased in size, sprinkle some flour on the dough and knead it briefly again.
  • Now roll out the dough on a lightly floured work surface into a rectangle measuring 45 cm x 50 cm. If the yeast dough sticks, sprinkle some more flour on the dough.
  • Your kids can now spread the nut filling evenly over the yeast dough.
  • Then use a knife to divide the flat dough into 3 rectangles measuring 15 cm x 50 cm each and roll all the rectangles together along the long side to form three 50 cm long partial rolls. The rolls do not need to be rolled very tightly as the dough will still rise.
  • Now cut each of the three rolls in half and twist 2 strands into a strand - this means that the nut filling can be seen and the yeast braid has a nice, visible pattern.
  • Now take the baking tray lined with baking paper and form a circle with one strand, which forms the head of the rabbit (see instructions in pictures). The other two strands are placed oval-shaped as ears at the top of the round yeast wreath and pressed together softly.
  • Before the Easter bunny is baked in the oven, brush it with a little bit of milk.
  • Now put it in the cold oven and then set the oven to 180°C top/bottom heat (this way the yeast dough can rise a little while the oven warms up). When the oven is fully heated, the yeast braid bakes for about 25-30 minutes until it is golden brown.
  • When it is finished baking, you will see the Easter bunny and the baking paper on the cooling rack and let it cool down.
  • Mix the powdered sugar with 2 tablespoons of milk to create icing that you can use to coat the yeast braid.

And hopp hopp your Easter bunny is ready for a sociable Easter!
