Looking for the perfect Christmas muffins? Today I’m sharing our family secret for the best Speculoos muffins. These festive muffins are fluffy, full of holiday flavor – and with their crunchy topping, they’ll become your new favorite treat during the Christmas season.
The Secret of Our Speculoos Muffins
Speculoos spice is something I simply can’t imagine Christmas without! My kids (“minis”) and I have baked many delicious holiday treats with it. But only this year did we perfect our muffin recipe – and the secret was just one thing: the crunch!
That crispy topping turns simple, fluffy Christmas muffins into a festive highlight. The crunchy Speculoos pieces and white chocolate chunks make them the perfect Christmas muffins. Try it yourself – here’s our quick recipe:
Quick Recipe for 12 Speculoos Muffins with Crunch
This recipe is perfect for baking with kids. It’s quick, fun, and your little ones will especially enjoy crumbling the Speculoos cookies for the topping.
I used store-bought butter Speculoos*, but of course, you can bake your own if you’d liken.

Ingredients for 12 muffins
Sponge dough
- 4 eggs
- 250 g margarine
- 150 g sugar
- 1 packet of bourbon vanilla sugar (15 g)
- 300 g flour
- 1 TL 1 tsp Just Spices “Speculoos Spice”*
- 100 ml milk
- 1/2 packet of baking powder (7 g)
- 5 butter Speculoos cookies
- 50 g white chocolate chunks (chopped white chocolate works too!)
- 1 pinch of salt
Speculoos crunch topping:
- 3 butter Speculoos cookies
- 50 g white chocolate chunks
- White chocolate (melted, for decorating)
Baking accessories
12-cup muffin tin, 12 paper liners, mixing bowl, spatula, hand mixer, cooling rack

Preparation
- Preheat oven to 180°C (350°F) top/bottom heat and line muffin tin with paper liners.
- Mix flour, baking powder, Speculoos spice, and salt in a small bowl.
- In a mixing bowl, beat margarine until creamy. Add sugar and vanilla sugar and mix well.
- Add eggs one at a time, beating each for about 30 seconds.
- Stir in the milk.
- Gradually fold in the dry ingredients until you have a smooth batter.
- Crush the Speculoos cookies into pieces (not too small – they should still “crunch”!) and fold them into the batter along with the white chocolate chunks.

- Divide the batter into the 12 muffin liners.
- For the topping: crush 3 Speculoos cookies into larger crumbs, mix with more chocolate chunks, and sprinkle over the muffins.
- Bake for 25–30 minutes. Do a toothpick test to check doneness.
- Let muffins cool on a rack.
- Drizzle with melted white chocolate before serving.
Mini-Tip: For a fruity twist, fold 100 g sour cherries into the batter – it makes the muffins extra festive!

Bei den Zutaten steht 100ml Milch🤔, aber bei der Zubereitung ist davon keine Rede mehr.
