For many little ones the first day of school is just around the corner! Today, we're baking colorful confetti muffins with pretty fondant school cones for the big event.
This year, the time has come for us too: my little one is starting school! It's an incredibly exciting time! Picking out a school bag, the last day of kindergarten, touring the new school, and of course, soon, the FIRST DAY at the new school...! (Sometimes I don't know who's more excited!?!)
For the kindergarten graduation party, I baked these colorful confetti muffins with fondant school cones for my little one and the other soon-to-be schoolchildren! After all, a special moment always deserves a special treat! 😉

Recipe for confetti muffins with fondant school cones

Ingredients for 12 muffins
- 150 g margarine
- 75 g sugar
- 1 packet of vanilla sugar (15g)
- 2 small eggs
- 200 g (spelled) flour
- 1/2 packet of baking powder (7 g)
- 1 pinch of salt
- 125 g Greek yogurt (10% fat)
- 20 g colored sugar sprinkles
Decoration
- pink melts*
- Letter sugar sprinkles*
- Fondant in pastel colors*
- Baker's starch
Baking accessories
Kitchen scales, mixing bowl, hand mixer, 12 muffin cups, muffin tray, dough scraper, tablespoon or ice cream scoop, bowl & saucepan or microwave for melting the melts, pastry brush, rolling pin, knife, ruler
Preparation
To decorate the colorful confetti muffins with pretty sugar cones, we'll start with the fondant before baking. If this is your first time working with fondant, I have collected a few tips for working with the fondant in my recipe for rainbow cake pops for you.
How to make school cones from fondant
- Knead the fondant until smooth
- Roll out the fondant on a work surface dusted with cornstarch until it is about 0.3 cm thick
- Now carefully cut out a pointed triangle for the school cone with a knife
- Now, using a different color, cut out the "closure" of the candy cone. For this, I traced a semicircle with a toothpick and cut three points in the middle of the "rounded side."
- I moistened the straight edges of the triangle for the sugar cone and the “closure” with a little water, placed them together and carefully pressed them together.
- Next, form a 4-5 cm long snake out of fondant and carefully place it in a loop around the “prongs” of the “clasp”.
- The final step is to attach colorful sugar balls to the school cone. If the fondant isn't rolled out too thin, you can simply press them into the fondant. If they don't stick, you can also attach them with edible glue.

We bake our colorful confetti muffins
After you have formed the decoration for the school enrollment muffins, you now bake the pretty, colorful confetti muffins.
- Before you start with the dough, preheat the oven to 170°C top/bottom.
- First, put margarine, sugar and vanilla sugar into a mixing bowl and beat until fluffy and light.
- Then add the eggs and mix thoroughly into the mixture. Each egg should be stirred in for at least 30 seconds.
- Next, stir in the yogurt.
- Now combine the flour, baking powder, and salt and stir into the mixture until a smooth dough forms.
- Finally, the sugar sprinkles are quickly folded into the dough with a spatula, as otherwise they will transfer their color to the dough, but carefully so that they do not crumble.
- The batter is now distributed evenly into the muffin cups using a tablespoon or ice cream scoop and baked for about 20 minutes. To make sure the muffins are baked through, please do the toothpick test.
- Once the muffins are baked, let them cool before decorating them.
We decorate pretty starting school muffins
Once the confetti muffins have cooled, you can decorate them for the first day of school.
- First, melt the melts in a water bath or in the microwave.
- Then use a pastry brush to spread a spot of the liquid melts onto the muffin.
- Now place one of the fondant school cones on the liquid melts and sprinkle the muffin with the great letter sprinkles.

And there you have it, these pretty pastel-colored starting school muffins are ready! These extra-sweet muffins are perfect for a unique moment!
