Recipe for our fluffy Poffertjes
The small, walnut-sized mini pancakes made from yeast dough have found their way to our Christmas markets from the Netherlands. The little delicacies are not only considered national dishes in Holland, they are also very popular in Germany at the Christmas markets, especially among the kids - but not only among them.
The recipe for the Poffertjes is ideal for baking with children - it's quick and easy to make and tastes absolutely delicious! Depending on how old your children are, you should bake the mini pancakes in the pan yourself, as your kids can easily burn themselves and turning the treats in the pan has to be done quickly.

How do you actually make poffertjes?
The Dutch pastry is made according to a traditional recipe from a 1:1 ratio of wheat and buckwheat flour. I adapted this for our recipe. But if you don't want to break with tradition, you can use instead of 250g flour 125 g of wheat and of buckwheat flour.
To fry the small pancakes you usually use a special pan with many small coin-sized cavities* . However, since very few German households have this, I baked the recipe in a “normal” pan. Of course, the mini pancakes don't have exactly the familiar shape, but they are very close to the traditional Poffertjes 😉

Ingredients for approx. 50 Poffertjes
- 300 ml milk
- 2 egg yolks
- 250 g flour
- 1/2 packet of dry yeast (7 g)
- 1 teaspoon cinnamon
- 1 pinch of salt
- 40 g sugar
- 1 tsp vanilla paste
- 2 egg whites
- butter for frying
Baking accessories
Mixing bowl, whisk, cooking pot, drying cloth, high mixing bowl, mixer, (disposable) piping bag or teaspoon, pan, spatula, cooling rack, small hair strainer

Preparation
- First, mix the spelled flour, salt and cinnamon in a mixing bowl
- Heat the milk to lukewarm in a saucepan or in the microwave and mix with the sugar
- Add dry yeast and let rise for 10 minutes
- Add the egg yolk, milk-sugar-yeast mix and vanilla paste to the flour and mix well with a whisk
- Cover the yeast dough for the poffertjes with a dry cloth and let it rise in a warm place for 30 minutes.
- Beat the egg whites with the mixer until stiff and shortly before baking the mini pancakes, fold them evenly into the dough and place the yeast dough in a piping bag.
- Heat the butter in the pan over a medium heat and use the piping bag to add small, round circles to the hot pan (if you don't have a piping bag at hand, you can also use a teaspoon to spread the yeast dough into the pan).
- The mini pancakes need to bake until golden brown on both sides for about 1.5 minutes (I keep an eye on the poffertjes, as all ovens/stoves have different powers).
- Place the baked poffertjes on the cooling rack and sprinkle them with powdered sugar if you like. (A little tip for connoisseurs: The little treats also taste heavenly with vanilla or chocolate sauce or dipped in delicious Christmas jam!)
