Here in northern Germany, summers are usually quite bearable. We rarely hit the 30°C mark, but if we do, I can think of better things than standing next to a hot oven with my minis, sweating, and then eating what surely is a delicious – but still lukewarm – sponge cake. At those temperatures, my minis and I are much more in the mood for a cool-down and lots – really lots – of ice cream!

Refreshing No-Bake Cakes
The BEST alternative to our beloved cakes is a cool, refreshing no-bake cake straight from the fridge. We love the combination of berries and yogurt or cream cheese. Our “Strawberry meets Chocolate Chip Cookie” No-Bake Cake has been our absolute highlight this summer!

No-Bake Cakes to Go – Little Cakes in a Jar
One of the quickest summer baking alternatives are little no-bake cakes to go – small refreshing desserts in a jar. Perfect for on the go and – the best part – ready in just 10 minutes to take along (or to enjoy right away). Our favorite for a spontaneous picnic in the park!

Homemade Ice Pops
Our absolute favorite summer baking alternative, however, has to be ice pops – in all their colorful and delicious varieties. My minis and I love creating new recipes every single year. From simple fruit juices, to fruity purée mixes, all the way to our favorite ice pop recipes (Mango-Coconut Ice Pops or or Raspberry-Vanilla Ice Pops).

Homemade Ice Cream Sandwiches selbermachen
Another absolute treat among the summer baking alternatives: cookies! But not like you know them from cozy winter days – warm, paired with a hot glass of milk. No, this is the summer edition! For this, you’ll need delicious cookies and your favorite ice cream. Put the two together and you’ve got the most amazing ice cream sandwiches. (Here’s our yummy recipe for ice cream sandwiches. For a super quick version, you can simply buy the cookies ;) ).
Here are some flavor combos we love:
- Lemon Pistachio Cookies with Pistachio Ice Cream
- Chocolate Chip Cookies with Vanilla Ice Cream

Healthy Watermelon Slush
A watermelon slush is wonderfully refreshing. Just freeze about 500g of cubed watermelon and then blend with the juice of one lime. Blend – and done! The most delicious watermelon slush ever! So easy, so tasty! I loooove this slush!
Fruity Smoothies
We love smoothies all year round. In summer, they taste especially good with ice-cold milk or even better with partially frozen fruit (bananas and strawberries work particularly well, in my opinion!). My minis’ all-time favorite smoothie definitely includes strawberries… and mango is always welcome, too.
Sparkling Summer Drinks
My minis love ice cubes! Any fruit spritzer or mocktail with fancy ice cubes makes their little hearts skip a beat. Honestly, even classic water ice cubes do the trick. But if I mix in food coloring or edible glitter* , or freeze little fruits inside – trust me – every drink instantly turns into a fancy summer drink! Probably one of the easiest alternatives to baking in the summer!
