Wow – isn’t this Teddy Bear Cake adorable? This cute teddy made from moist sponge cake is the highlight of any kids’ birthday party. The best part: it’s super easy to bake and is guaranteed to put smiles on little faces.
My big Mini had a birthday, and together with my little Mini I thought about which cake would bring the birthday child the most joy! This year, my little Mini immediately chose the sweet Teddy Bear Cake – a real themed cake for kids that not only looks amazing but is also very easy to make. A win-win situation I just love!
Here’s the recipe for you, so you can delight your Minis too, or bake an absolutely cool teddy cake together:
Recipe for the Sweet Teddy Bear Cake
The Teddy Bear Cake is a wonderful birthday cake and easy to prepare ahead of time. We baked ours with our delicious nut cake recipe. But you can also use other moist sponge cakes like lemon, vanilla, or chocolate. Just make sure the batter isn’t too airy, otherwise the bear might not stand firmly on its cut edge and could topple or break.

Ingredients for a 26 cm Springform Pan
Nut Cake Batter
- 375 g margarine
- 6 eggs
- 280 g sugar
- 1 packet of vanilla sugar (15g)
- 375 g (spelled) flour
- 1 packet of baking powder (15 g)
- 200 g ground hazelnuts
- 100 g grated dark chocolate
- 125 ml milk
Decoration
- 200 g dark chocolate
- 30 g white chocolate
- 25 g marzipan raw material
- 8 almond slivers
- Sprinkles* (I used RUF)
- Ice cream cone
- Red food coloring* (I like the droplet system from Goodbake*))
- 3 skewers
- Sparklers & candle*

Baking accessories
Kitchen scale, measuring cup, mixing bowl, hand mixer, 26 cm springform pan, sharp knife, spatula, saucepan & bowl for double boiler, pastry brush, cooling rack, rolling pin, muffin tin, muffin liners

Step-by-Step Instructions: Teddy Bear Cake
Bake the Nut Cake
- Line the springform pan with baking paper.
- Preheat the oven to 175°C top/bottom heat.
- Beat margarine, sugar & vanilla sugar until fluffy.
- Mix in the eggs one by one.
- Add flour and baking powder, mix well.
- Fold in ground hazelnuts, grated chocolate, and milk until smooth.
- Pour batter into the prepared springform and a little into a muffin liner.
- Bake the muffin for 15–20 minutes, the nut cake for 45–50 minutes.
- Do a toothpick testto check doneness.
- Let cake cool in the pan for 10 minutes, then carefully remove and cool completely.

Shape the Teddy Bear
- Cut the nut cake into two parts. I didn’t cut it exactly in the middle, but about 2–3 cm off-center. The larger half becomes the bear’s head. From the smaller half, cut two larger semicircles for ears and smaller semicircles for paws (see pictures).
- Separate about 10 g of marzipan and roll into two balls. Flatten them – these are the bear’s eyes. Color the remaining marzipan with 2–3 drops of red food coloring and roll out. Cut two circles for the bear’s muzzle and muffin decoration, and two half circles for the inner ears.
- Melt dark chocolate in a double boiler, coat all five cake pieces, and let dry slightly. Attach eyes, muzzle, inner ears, and claws before the chocolate sets.
- While the chocolate dries, melt the white chocolate and coat the ice cream cone. Sprinkle with colorful sprinkles and set aside to dry.
- Decorate the muffin as desired – I covered mine with a marzipan disc and a few sprinkles.
Assemble the Teddy Bear Cake
- Stand the bear’s head upright on its cut edge and secure with three skewers from the top.
- Attach ears and party hat (ice cream cone) to the skewers.
- Place the paws to the left and right of the bear’s head. Position the decorated muffin in front of the bear cake.
And the Teddy Bear Cake is ready!
