Our quick apple sheet cake is the perfect fall recipe for the whole family – moist, fruity, and topped with a crunchy layer of almonds.
This cake is ideal for spontaneous autumn baking with kids. It uses regional and seasonal fruits like fresh apples and crunchy almonds, and it makes enough for a cozy afternoon coffee date with friends.
This recipe for our delicious apple cake is also our first contribution to the autumn blog parade “My Favorite Fall Recipe!” We’re lucky to have several apple trees in our family garden, so every year we get to enjoy plenty of fresh apples – which we love to turn into homemade applesauce and, of course, apple cake!

The Quick Fall Recipe: Easy Apple Sheet Cake
Our easy apple sheet cake is made with a simple sponge batter and juicy apple chunks. The “minis” (your little helpers) can take on the challenge of peeling, coring, and chopping the apples. If that’s still a bit too tricky, you can help with the peeling and coring – and let them practice cutting the apples into small pieces. Most kids can manage this from age 3 or 4.

Ingredients
(for one baking sheet)
- 5–7 tart apples (about 300 g diced apple pieces)
- 1 Lemon
- 2 eggs
- 150 g sugar
- 1 packet of vanilla sugar (15g)
- 100 g margarine or butter
- 150 g spelled flour
- 2 tablespoon baking powder
- 100 ml milk
- 50 g almond flakes
- A little powdered sugar for dusting
Baking accessories
Baking sheet, parchment paper, sharp kitchen knife, lemon squeezer, paring knife, cutting board, kitchen scale, saucepan, mixing bowl, small bowl, hand mixer, spatula

Preparation
- Line your baking sheet with parchment paper.
- Peel, core, and dice the apples.
- Squeeze the lemon and mix the juice with the apple pieces to prevent browning.
- Preheat oven to 180°C (fan) / 350°F (convection).
- Combine flour and baking powder in a separate bowl.
- Slowly melt the butter in a small saucepan.
- In a mixing bowl, beat eggs, sugar, and vanilla sugar with a hand mixer until creamy.
- Add the egg mixture together with the butter and milk. Mix briefly until smooth.
- Gently fold the apple pieces into the batter, then spread the mixture evenly onto the prepared baking sheet.
- Sprinkle the sliced almonds on top. Bake for about 45 minutes at 180°C (fan) until the cake is golden brown.
- Let cool slightly, then dust with powdered sugar before serving.
This quick apple cake tastes amazing on its own – or with a dollop of whipped cream or a scoop of vanilla ice cream!
