We recently took a trip to Würzburg and after looking at the residence, we decided to take a short walk to the “Alte Mainbrücke”. When we had almost crossed it, a chain of reactions started. The Mini bumped into the Spaniard, whereupon both he and my Mini could no longer take their plate-sized eyes off a couple on the edge of the bridge. The reason for this? A huge, juicy, simply unspeakably delicious-looking yeast roll that the two of them enjoyed eating. I was quickly sent off with the task of finding out where they had gotten hold of it. The order was successfully completed, 5 minutes later we were standing in line with many others for incredibly delicious yeast rolls and from this point on we associate Würzburg with this temptingly delicious yeast roll experience. I don't have to explain to you that my next baking idea was born, do I? Yeast rolls!

Recipe for our tempting baked apple yeast rolls
Admittedly, yeast pastries and rolls are not the easiest recipe for baking with children, but at the same time “if you don’t dare, you don’t win”! The yeast dough just needs a little more of your patience and your mini needs your help when rolling and cutting the rolls... and then it will be fine! And who said that the little rolls have to look perfect? One thing is for sure, they will all be delicious! So, dare to try it together!
Ingredients
Yeast dough
- 300 ml handwarm milk
- 60 g sugar
- 7 g dry yeast (1 packet)
- 75 g melted butter
- 1 egg
- 2 tsp salt
- 525 g wheat flour
Filling
- 65 g very soft butter
- 40 g brown sugar
- 2 teaspoons cinnamon
- 25 g marzipan raw material
- 2 apples (peeled, cored and cut into dices)
- 50 g chopped almonds
- Optional: Raisins if desired
Topping
- 1 egg yolk and 2 teaspoons milk for brushing
- 100g powdered sugar
- 3 tbsp maple syrup
- 2 tbsp milk
- 1 teaspoon cinnamon
Baking accessories
Mixing bowl, small pot, food processor with dough hook or hands, tea towel, board & knife, wooden spoon, spoon, rolling pin, knife or twine for cutting the yeast rolls, baking dish (approx. 22 x 32) or 26 springform pan, hair sieve, baking brush
Preparation
Yeast dough
- Add all the ingredients for the yeast dough - lukewarm milk, sugar, yeast, melted butter (it's best to let it melt in a pot over low heat on the stove and then let it cool a little), egg, salt and flour - into the mixing bowl and knead well. The dough is very soft, so kneading with a machine may be more comfortable.
- Then cover the dough with a tea towel and let it rise in a warm, not drafty place until it has roughly doubled in size (approx. 1 hour).
Filling
- While the dough is resting, create the filling with your kids. To do this, peel, core and dice the apples very finely and then fry them on the stove over medium heat. Now put all the ingredients for the filling (except for the raw marzipan mixture) into the pot and stir them together. Finally, add the raw marzipan mixture to the mixture and remove the filling from the heat after about 2 minutes.
Baked apple yeast rolls
- After the yeast dough has rested for an hour, take it and roll it out on a floured surface into a rectangle measuring approx. 45 x 50 cm and spread the filling on it. The last 2 cm of the dough is not covered with the filling so that we can then close the dough roll cleanly. Now the dough is rolled up from the long side.
- Cut the roll into approx. 4 cm wide pieces and place them in the greased or baking pan lined with baking paper, leaving a little space between them. Now let the rolls rise covered for another 30 minutes at room temperature.
- After 30 minutes, the yeast rolls are brushed with a mix of egg yolk and 2 tablespoons of milk and baked for 15 minutes at 175°C in a preheated oven until golden brown.
Mini Tip – I put the yeast rolls in the cold oven and use the oven's warm-up time again so that the yeast rolls can rise. Attention, if you follow this tip, the yeast rolls will be in the oven for longer than 15 minutes. You have to add the warm-up time of the oven to the baking time.
- While the baked apple yeast rolls are baking, make the glaze. To do this, the powdered sugar is sifted into a bowl and all the ingredients for the glaze are added and mixed to form a smooth icing. After the yeast rolls have finished baking, they are taken out of the oven and the icing is generously brushed onto the warm yeast rolls. Now the yeast rolls can cool down and then be served!
