This delicious recipe for moist carrot cake is a true Easter classic—but it’s just as perfect for any other occasion!
An Easter celebration without the classic carrot cake? Possible, but somehow not quite complete! That’s why we’re keeping the tradition alive and baking a moist carrot cake for the holiday. Thanks to the fresh carrots, this Easter treat is wonderfully soft and juicy.
For this year’s Easter decoration, we came up with something extra cute: marzipan bunnies, Easter eggs, and chicks! Using fun 3D cookie cutters (also known as "cookie stamps"), we stamped these adorable designs onto marzipan and used them as sweet decorations for our carrot cake. The little ones were absolutely thrilled! Of course, this Easter cake tastes just as delicious without decoration, but let’s be honest—it looks even cuter with the little marzipan bunnies! 😉

Recipe for our moist carrot cake
The recipe for our moist carrot cake is a simple batter cake. The only challenge might be grating the carrots with a kitchen grater. Since graters are usually quite sharp, I recommend taking on this task yourself or guiding your children through it. You know best if your child is ready for this task. Recipe for our moist carrot cake
Ingredients for a 26 cm springform pan
Sponge dough
- 380 g grated carrots
- 250 g flour
- 1 teaspoon baking powder
- 1 packet of vanilla sugar (15g)
- 75 g brown sugar
- 75 g granulated sugar
- 2 tsp cinnamon
- 1 pinch of salt
- 250 ml sunflower oil
- 4 eggs
- 200 g ground almonds
Decoration
- juice of half a lemon (approx. 2 tablespoons)
- 80g powdered sugar
- Sugar sprinkles
- 50 g raw marzipan mixture*

Preparation
Baking our Moist Carrot Cake
- First, wash the carrots, remove the green tops, and grate them into small shreds using a kitchen grater.
- Next, preheat the oven to 180°C (top/bottom heat) and line the bottom of a springform pan with parchment paper.
- Now, add all the dry ingredients (except for the ground almonds) into a mixing bowl and briefly mix them together with a spoon.
- In the next step, add the sunflower oil and eggs, and whisk the batter for about one minute. The mixture will noticeably lighten in color.
- Then, add the ground almonds and mix them in briefly.
- Finally, fold in the grated carrots until they are evenly distributed throughout the batter.
- Now, pour the batter into the springform pan and bake for 50-60 minutes. To check if the carrot cake is done, perform the toothpick test, as all ovens bake differently. This ensures the cake is fully cooked or if it needs a few more minutes.
- Once the cake is done, let it cool for 10 minutes in the springform on a cooling rack. Then, carefully remove it from the springform. Start by running a blunt knife along the edge between the springform and the cake, then remove the outer ring. Place a cooling rack on top of the cake and gently flip it over, so the bottom of the springform pan is now facing up. This way, you can easily remove the base of the pan and let the cake cool completely.

Decorating the Carrot Cake for Easter
- For the decoration, knead the marzipan briefly to make it easier to work with, then roll it out with a rolling pin. Use Easter-themed cookie cutters to cut out cute marzipan shapes. Set these aside for now.
- Now, mix powdered sugar and lemon juice together with your little ones to make a thick icing. To avoid the icing being too runny, start by mixing 1 teaspoon of lemon juice with the powdered sugar and gradually add small amounts of lemon juice until the icing reaches the right consistency.
- Spread the icing over the surface of the moist carrot cake, then place the marzipan shapes on top as decoration. Finally, sprinkle a few sugar sprinkles over the icing. But don’t wait too long, or the icing will dry, and the sprinkles won’t stick to the cake.
Now your moist carrot cake is ready to be enjoyed by you and your little ones!
