A birthday is coming up – and this time there’s no big theme or treasure hunt. Instead, we’re celebrating with a relaxed summer party. Of course, no party is complete without a special cake: a mascarpone strawberry cake topped with fruity cream and cheerful sprinkles. The perfect birthday cake for kids and a showstopper for any summer buffet.
Recipe for Our Summer Strawberry Cake
This strawberry cake recipe is not only easy to bake but also great for baking with kids. Young helpers can prepare the vanilla sponge, while decorating with cream and sprinkles makes it fun and creative.
Vanilla Sponge
- 4 eggs
- 250 g margarine
- 150 g sugar
- 2 packets Bourbon vanilla sugar
- 300 g flour
- 100 ml milk
- 1/2 packet of baking powder (7 g)
- 1 pinch of salt

- 200 g strawberries
- 500 g mascarpone
- 2 packets Bourbon vanilla
- 2 tsp San Apart (cream stabilizer)
- pink food coloring*
- yellow food coloring* (we use the drop system from Goodbake*)
- sugar pearls & sprinkles

Baking accessories
Scale, hand mixer, mixing bowl, spatula, cooling rack, 26 cm springform pan, baking paper, immersion blender, measuring cup, knife, 2 small bowls, piping bag with star tip.
Step-by-Step Instructions: Strawberry Cake
To make the strawberry cake, first bake a delicious vanilla base and then make a fruity, creamy strawberry topping!
Baking the Vanilla Sponge
- Preheat oven to 180°C (top/bottom heat).
- Line springform pan with baking paper.
- Beat sugar, vanilla sugar, eggs, and margarine until creamy.
- Mix flour and baking powder, add to mixture, and stir well.
- Pour batter into springform pan and bake 30–35 minutes. Test with a toothpick to check doneness.
- Remove sponge from the pan and let cool completely.
Making the Strawberry Cream
While the cake base for the strawberry cake is cooling, make the strawberry cream for the summer strawberry cake:
- Wash, dry, and hull the strawberries.
- Puree strawberries with an immersion blender and set aside.
- Mix mascarpone, Bourbon vanilla, San Apart, and 100 g strawberry puree to make cream.
- Divide cream into three bowls:Tint one part yellow, tint one part pink and leave one part natural (light pink from the puree).
Decorating the Strawberry Cake
After you've made the vanilla sponge and the strawberry cream, you can now devote yourself to the best part: decorating the cake!
- Spread the remaining strawberry puree (100 g) on the cooled sponge.
- Pipe rosettes with the natural cream.
- Add yellow dots with the yellow cream.
- Fill remaining gaps with the pink cream.
- Decorate with sugar sprinkles and pearls.
Little Tip: Add fresh strawberry pieces on the sponge for an even fruitier cake!
