School has started again – and with it the daily question: what’s going into the kids’ lunchbox today?
Healthy lunchbox snacks should be filling, provide energy, and of course taste good. Especially in a busy everyday life, I’m constantly on the lookout for simple and nutritious recipes that my children enjoy eating.
To kick off the new year, we therefore tried out a new recipe: protein-rich granola bars. They’re quick to bake, made without industrial sugar, and are perfect as a healthy snack for school or kindergarten.
The cottage cheese (curd cheese) adds a pleasant freshness and extra protein, while oats and nuts provide long-lasting energy and the necessary crunch. Dates bring natural sweetness – completely without refined sugar.
An all-around healthy snack for the lunchbox that keeps your kids full for a long time.
Recipe for Protein-Rich Granola Bars for the Lunchbox
This delicious recipe for healthy granola bars is super quick and easy to bake. Together with your little ones, you can prepare this tasty lunchbox snack.

Ingredients for Protein-Rich Granola Bars
(makes about 5 large or 10 mini granola bars)
- 40 g carrots
- 20 g cashew nuts
- 20 g hazelnuts
- 20 g dates
- 120 g fine rolled oats
- 1 teaspoon baking powder
- 200 g cottage cheese (curd cheese)
- 2 eggs

Kitchen scale, food processor, mixing bowl, grater, baking tray lined with baking paper, cooling rack

Preparation – Making Healthy Granola Bars Yourself
- Grate the carrot and place it in a mixing bowl.
- Chop the cashew nuts, hazelnuts, and dates in a food processor and add them to the bowl.
- Add the oats, baking powder, cottage cheese, and eggs, and mix everything well.
- Preheat the oven to 180°C top/bottom heat.
- Shape the mixture into individual bars and place them on the baking tray lined with baking paper.
- Bake the shaped bars for 20 minutes until golden brown.
- Once baked, let them cool on a cooling rack.
Your delicious granola bars for the lunchbox are ready.
