Creamy wild berry coconut ice pops

Ice pops are the perfect refreshment for little ones in the heat! With these wild berry coconut ice pops, your little ones can enjoy healthy snacking even in the summer!

Now we're promised two more days of summer here in the north, so we won't hesitate and will produce a new, delicious variety of ice pops!

After our refreshing vanilla raspberry ice pops and the fruity-creamy KiBa ice pops we now combine juicy, local forest fruits with the exotic taste of coconut: we have creamy wild berry coconut ice pops!

Recipe for wild berry coconut ice pops

Ingredients

The ingredients correspond to the preparation for 150 ml (Bunny silicone mold*). For a classic ice pop shape (classic ice pop silicone mold 450 ml each*) you use three times the amount.

Ice pop mixture

  • 100 g wild berries (blueberries, currants, strawberries, cranberries,… You can also find wild berry mixes in the freezer at the supermarket)
  • 75 ml coconut milk
  • Agave syrup as desired

Sieve, tall container for blending, hand blender, dough scraper, ice pop mold, spoon

Preparation

Before you start preparing the wild berry coconut ice pops, make some space for them in the freezer. Then you're ready to go!

  • Wash the fresh wild berries thoroughly and then drain them in a sieve. If using frozen wild berries, thaw them before processing.
  • Place the forest fruits in a tall container and puree finely with a hand blender.
  • Then sweeten if desired and puree again.
  • Now, together with your minis, distribute the pureed forest fruit mixture evenly into the ice pop molds.
  • In the next step, pour the coconut milk into the unwashed blender and puree the coconut milk with the hand blender (this will give the coconut milk a light wild berry flavor).
  • You can also sweeten the coconut milk if desired and then mix it again with a hand blender.
  • Pour the coconut milk evenly over the wild berry mixture in the ice pop mold.
  • For the marbled look, use the end of a spoon to draw one or two loops through the popsicle mold. This will mix the two popsicle masses together, creating a pretty effect.
  • Finally, the wild berry coconut ice pops are placed in the freezer for about 4 hours and can then be enjoyed.

Of course, this recipe invites experimentation! The wild berries can be wonderfully substituted for other juicy summer fruits like mangoes, strawberries, passion fruit, etc.
