It's strawberry season! This strawberry cake is wonderfully fluffy, and you can bake it quickly and easily with your kids! And if your little one is starting school this summer, we'll show you how to quickly decorate it into a pretty first-day-of-school cake.
It's back: our beloved strawberry season! Of course, the kids, the Spaniard, and I were already in the strawberry field and had already eaten our favorite, quickest strawberry cake! Today we share with you a refreshing summer recipe with strawberries.
And since the school year is slowly coming to an end and the new first-graders are about to start school, we are decorating the quick strawberry cake as a colorful cake for the first day of school.

Recipe for the simple strawberry cake
This quick strawberry cake recipe uses an all-in-one batter. Making the batter is quick and easy. Decorating it is also very easy, making it ideal for baking with kids.

Ingredients for a 20-piece mold
All-in dough
- 100 g caster sugar
- 1 packet of vanilla sugar (15g)
- 1 Lemon
- 3 eggs
- 150 g soft margarine (or butter)
- 250 g flour
- 1 packet of baking powder (15 g)
- 50 ml milk
- 1 pinch of salt
- 180 g fresh strawberries
Decoration
- 100g powdered sugar
- 1 Lemon
- pink food coloring (we use the droplet system from Goodbake)*
- 1 pack of “Decorative ABC and Numbers by Dr. Oetker”*

Baking accessories
Kitchen scales, measuring jug, cutting board, cutting knife, mixing bowl, hand mixer, dough scraper, spoon, 20cm springform pan, lemon peeler, citrus press, small bowl, brush for coating, cooling rack
Preparation
First the strawberry cake is baked.
- First, preheat the oven to 180°C top/bottom heat and grease the baking tin.
- Now prepare the strawberries: wash them, pat them dry, remove the green stems, and cut them into small cubes. Then set them aside for a moment.
- For the all-in-one dough, put sugar, vanilla sugar, lemon zest, juice of one lemon, eggs, butter, spelt flour, baking powder, milk and a pinch of salt into the mixing bowl and mix all ingredients with a hand mixer until you have a smooth dough.
- Now add the strawberries to the batter and gently fold them in. They should be completely covered by the batter, otherwise they might burn during baking (and that doesn't look very pretty...)
- Bake the strawberry cake for about 40-45 minutes until golden brown. Please check if the strawberry cake is done by inserting a skewer into the center of the cake. (How to perform a swab test.)
- Once the strawberry cake is fully baked, remove it from the oven and let it cool in the pan for 10 minutes. After 10 minutes, remove it from the pan and let it cool further on a cooling rack. (Mini-Tip You may need a small knife to remove the cake from the springform pan.)
The strawberry cake is decorated for the first day of school
- After the strawberry cake has cooled, mix the icing from powdered sugar, lemon juice, and pink food coloring. Use a little lemon juice at first, otherwise the icing will quickly become too runny.
- Now cover the strawberry cake with icing and generously decorate the cake with brightly colored decorative letters and numbers.
The colorful Starting School Cake is ready!
Mini-Tip: The strawberry cake also tastes wonderful if you just dust it with powdered sugar!
